I soak the fillet in salt water for 12 hours (over night).  Then score the fillet in about an inch segments leaving the skin attached.  Keep the heat about 120, applying the syrup every 20 minutes in the beginning and less often about a few hours.  7 hours is about what I do but you can take it off earlier and it will be moist or leave it on longer and it would be more firm.

You can't apply too much syrup.
