Out of the smoker and coOlinger on my outdoor cooler. Soon be ready for vacuum sealing. Flavor is wonderful, has a slow heat to it as well. A bit much for me these days but I suffer through.

If you can't make UT tasty by smoking it, we'll it probably isn't fit to eat anyway. To me fried paddle fish has a very fishy taste,,some people enjoy it, I am not one. Only thing ever ate that was similar was sturgeon in Washington State many years ago at a resturant. They thought it was the greatest thing ever and didnt seem to appreciate my comments when asked how I liked it! Wasn't inedible by any means but their description of the quality and size of the portion didn't live up to the plate I got, of course on the same trip I got suckered into ordering edamamme which turned out to be steamed soybeans in pods, AND IPA beer, them folks have strange tastes, couldn't get decent BBQ anywhere or buy Redman either. But coffee was pretty good and warm whole wheat bagels kept me alive for the few days I was there.😞

Had some chicken thighs in the small cast iron skillet for supper with microwaved baked potatoes and gravy. BUT after supper is when the magic started, had about 21 lbs of ground venison thawed and waiting, mixed in 3 lbs of plain pork sausage and a LEM seasonings packet of Andouille Summer Sausage seasoning. Mixed, stuffed, and ready for a nap in the fridge before it gets warmed up for 8 hrs or so in the smoker tomorrow.

I smoked some slabs that were given to me years ago, fresh off the smoker they were at best ehhh. Later after they had cooled they were actually pretty good.

Spoonbill and trout, you must use a LOT of cajun seasoning!!😉

I think there are lots that are my favorite at different times. Crappie in fall and spring, walleye, white and hybrids, bluegill on a fly rod for simple fun, goggle eye for the beautiful locations, smallies for fun and location. Heck I have even been know to target the lowly trout (been a LONG time though), even been on more than one trip targeting carp when younger they are a hoot for kids to hook into. The oe thing I have never caught and always wanted to is a spoonbill, went once but no joy. I just don't have the equipment or knowledge to target them.

They can call them Joe the plumber if they want, but the way they are made keeps fiery flare ups from happening. Maybe I am over thinking the whole thing, before I even knew about pellet grills I would have been happy with a new one just like I had.

As much as I loved charcoal grills, at this point in my life, I just don't have the time for one. I was just going to get a brand new Charbroil 2 burner infrared, have had 2 so far and they worked great until they rust out in 4 years or so. If a pellet grill doesn't get hot enough to sear I don't think I will like one. ?

Hmmm, the write up says consider them an indirect heat source smoker and not a grill. I have an electric smoker and just want a grill, now I am in a connundrum.

OK fellers you all seem to know a thing or three about cooking so . . . I am gonna replace my gas grill. Thinking maybe I want a pellet grill, not gonna spring for a Traeger, but looking at the Pitboss 700, talk to me gentlemen, good bad, etc.

I just wing it, corn meal (yellow or white) garlic salt, garlic powder, usually a little black pepper, maybe some thyme, maybe some cajun, maybe some old bay. I then taste the mix. It can be a little spicy because you will lose some heat deep frying them. Like Dutch I usually cut the "tenderloin" piece off. Each crappie fillet I get 3 pieces out of. The tenderloin, the tail secton and the delicious chip that come off the back side of the ribs. I do them that way because by the time the tenderloin piece is done the tail piece and especially the rib chip is over cooked, and I do not lie overcooked fish. I also like to grill them,,lay a whole fillet onto a sheet pan lined with foil. Paint them with melted butter with a little lemon juice and garlic. Then season with whatever spices tickle your fancy, just don't overdo it, I like a little dill on top as well. Grill until they flake apart. Walleye are superb that way. I even lie RPS fish burger, I didn't execute it well but the flavors were there. Finally grill up some white bass with cajun seasoning, let it cool slightly and break up the meat. Get some flour tortillas, add fish, guacam, Pico whatever you like and eat them up. Finally I have made a fish chowder that was pretry good too, I simply Googled it and picked on to use. -
Superbowl food tonight. Our turn to cook with friends so I suggested a fish fry, fried crappie/catfish/white bass. Got some of the bags of fillets out of the freezer, with spring a coming that is worth something. Obligatory fried taters (my wife's speciality) and a crockpot corn casserole. Not much color variation in it but nobody ever complains when I fry fish. I don't care who wins the game, but one of my good friends absolutely hates Tom Brady so my job is to the the vocal one everytime the Patriots do something good, just to tick her off, and I am good at it.

The ability to provide a clean, viable and sufficiently large source of drinking water is, I assume, the primary concern. While I agree that providing recreational opportunities wouldn't affect that I don't know that it is required.

Yeah, I am gonna look at those clear pvc panels if I ever get to town again, seems like sometimes I am there twice a week other times when I want something it will be 2 weeks. Not willing to drive to spfld just for that. Although I need a new grill also so . . . I could look at pellet grills too.

Working on my cold frame this weekend. Have always just covered it with some plastic sheeting that I can roll back when it is warm. However it is a pain at times. Am thinking I want to either do an arch with some half inch cpvc and some fittings or a sloped cover. Any experiences I can utilize. The arched system seems cool, but a "flat" sloped cover I can simply prop seems pretry easy. Even considering a longer lasting one with pvc panels.from.lowes.

Seemed like a good pancake night. Basic mix was bisquick, coca-cola, then some vanilla powder and old town spiced sugar. Moms was plain, wife requested chocolate chips, mine got raisin and a drizzle of caramel topping. Little smokies on the side and a couple of over easy eggs on top. Lots of syrup, think I will just sit here in the big chair for a while now.

Glad to see you got your avacado fix. Wishing had a couple ripe ones right now, peel, slice and shake a little house seasoning on them and eat. Heck they are even supposed to be good for you. My wife used to be a grey in the middle steak person, now after letting her taste some more better ones I usually catch heck for over cooking them if they are just pink in the middle. Other folks can eat their steaks burned black or still raw, don't matter to me, only how I have to eat them matters to me.

There was a time when I would bet you couldn't knock me out of a boat, great balance and could roll with the waves etc. no worries at all. One dam round of chemo and poof balance gone, much of it has come back but it ain't never gonna come back all the way. I have worked around the lakes and seen too many odd things to be sure of anything anymore. I am a bit more sensitive where kids are involved, if an adult wants to take there chances go for it, but don't risk other people's or your kids lives. BH, I don't know the circumstances of your rescue at Caplinger, but if the water was running good that thing is dangerous, low head dams are drowning machines when flowing. Glad it didn't pull you and wife into it and make it a triple drowning, otherwise who would try to convince me that goose and duck are actually edible.

Lots of folks can swim a long distance (I am NOT one of them), however instead of psychic yourself up for it can you do it if just suddenly you go into the water, or if you go in hard (boat crash), or if fishing truman if you take a tree stump to the ribs when you fall, or if the water temp is 40 degrees. I know my swimming ability is roughly that of a fat rock, or maybe an old tire, and even at that I don't always do what I know to be right, I do make sure I wear my PFD when running with the outboard and did buy an inflatable, but should spend the $20 for a recharge kit just to make sure the dang thing works. Like FW said change some parameters and all bets are off.
