    Congratulations to all the Cubs players and all you fans - enjoy the rest of the season. Since you beat my birds, as tough as it may be to swallow, I am now a Cubs fan for as long as they last this postseason. Next April I will revert to Cubs hater.

    Theo has definitely made a difference for the Cubbies, you have to give credit. They've got a decent manager now too. Four rookies? FOUR? And they're playing unconscious. But I still like the Cardinals.

    I figured on a likely loss to Arietta but not the way that one happened. I was really hopeful when they got to him the way they did. Still too early to give up on the Birds if you ask me. I will go out on a limb and predict a game five win for the Cardinals and an intact Cubs curse.

    There is a stunningly beautiful Amish (I think) young woman that is a regular vendor at the Farmer's Market at Farmer's Park in Springfield.

    About 8 hours at 200. Falling off the bone. Sunday I added more onion, carrots, celery, a can if petite diced tomato, half an eggplant diced and about half a cup of barley, a pint of beef stock and a Lienenkugel Oaked Lager. Back in the oven about three hours at 250. Outstanding.

    You being who you are, I will take your advice on both counts. Edit: Go ahead and tell me what to do. I promise it won't be a problem. The tail got messed with tonite and some Worcestershire (about 2 Tbsp.) added to the bowl its resting in.

    That looks and sounds really good. The fire ring is awesome. Think about a shot or two of soy next time if you are not one of the sodium hypertension types. In a pump spray mister is how I do it.

    Mine has three all spice berries, a bay leaf and then after that it will be up to me. Beef broth and some decent red wine (my standard is if you like it for drinking it will be good for cooking) will be in there, an onion, a garlic clove or two, some carrots, and I've got an eggplant that I think I will chunk up and put in as well. Hadn't considered tomato paste but who knows? And maybe some brown rice to add a little body. I love good braised beef and ox tail makes it so incredibly rich. And when I said the tail is seasoned and will sit in the fridge for a while, I'm thinking until Saturday. No rush.

    I'm making braised ox tail stew. The tail is now cut into pieces and rubbed with salt, garlic and paprika. It's going to sit in the fridge for a while that way. I'll keep you guys posted.

  22. Premier and triumph are on the same blanks IIRC. The hardware on the triumph line is a little lower grade thus the difference in price. Again IIRC. I own both.

    Stuffed bell peppers. Nothing fancy but think the egg approach won't hurt a thing. Will also do some garlic ciabatta bread when the time comes. The peppers were about an hour off the vine when they got stuffed. Brown rice, diced tomato, fresh crushed garlic, and hamburger from the beef we had processed this spring and a little sharp cheddar. The rest of the cheddar will melt on top later.

    I did another batch of smoked pickled eggs today. Turns out they are my grandson's favorite snack and I had a special request. Peeling 30 eggs in one stretch will give you a sore thumbnail. Gave a jar to my neighbor too. It's like the clock went back 50 years living here. We actually know each other, get along and keep each other in good stuff. Came home with a bag of peppers that are going to be part of supper. Julienned one green bell, one red bell and one ripe Anaheim, sautéed with EVOO, a sweet onion, a clove of garlic and my secret ingredient, a shot of sweet vermouth. They will go on the Italian sausage that's on the smoker right now. No need to post pics, everybody knows what sausage and peppers on Italian bread looks like.
