  2. Walking around the yard today I came upon this rather large praying mantis and decided to get her portrait. She was fat laden with eggs. I felt sorry for her mate that she consumed after he got lucky. After a bit of coaxing i got Mrs. BilletHead to model the mantis, BilletHead
  3. Rolling in the greens, After a lousy start the Fall greens produce. One bed an army of army worms marched through all but destroyed it. The other bed and wicking tubs did well. I am so glad Lettice is cold tolerant as two frosts have hit no problem, BilletHead
  4. Ten days ago found and took pictures of a couple hens. Decided yesterday to pick them. They had at least tripled in size, And then picked, #2 then and picked, Mrs. BilletHead grocery shopping in the woods , Still have two places that have not produced this season.     I see you all are eating well as are the BilletHead's, Todays meal started with a hen of the woods casserole . We have been watching a pair of hens growing now for 10 days. Yesterday they were picked. This morning part of one worked up beginning with sautéing mushrooms and onions, These were layered in a dish and then a sauce on top of that, Into the oven it goes! Walleye battered and fried, As this was happening I went to garden to pick lettuce. I washed and made salad, All ready and proceeded to fuel our bodies., Something from the lake, woods and garden. In the famous words of Terrierman , "I Love This Planet" and what we are blessed with, BilletHead

  11. You and Pat and I are 100 percent for times out and success. If I wait for a good one that will change real quick for me. Depending on wind direction and how I am moving I may try in the AM BilletHead
  12. Mike just the last few days I have got some daytime pictures. Cows out there too that I have to fight with. Best cover scent available though. A stomp in the first cow paddy I see on way to stand. We skin and quarter and put in cotton bags as fast as we can. Have an old fridge in garage where they cool well before processing. BilletHead

    Couldn't sleep and up at Five AM to start charcoal, Breakfast sausage goes up a notch over the grill with wood. We end up with tickets to the lions pancake breakfast every year. They do charcoal for their sausage. Good start to the day here. May have to skip lunch and dinner today BilletHead

    What's Cooking?

    Been a pretty good week around here. Some Fall shopping and cooking here in BilletHeadVille. This post is going to be picture heavy. Last Wednesday morning I did a small hunt and got three geese for our only early goose season hunt. Good enough to start filling the larder. Then Thursday Afternoon did my first bow hunt for the season and shot a small doe. Just been waiting for cooler weather and her it is. So this morning Mrs. BilletHead took the crossbow and went to the same stand I had hunted. She lasted a bit over an hour and came back to the house. At home we watched a deer go across the yard and right by her stand . Pretty funny. We had decided to braise both front shoulders from my deer. So they were rubbed with olive oil and salted. Preheated the oven to 450 and popped them in for 35 minutes to brown, Removed the meat and added a bottle of apple wine to pan and scraped up the brown bits. Then added from the garden fresh rosemary chopped, sage chopped and a couple sprigs of thyme, Nestled the meat back in and added chicken stock to half way up the meat, Back in the oven at 300 degrees covered for three hours. Time to do something different. Need a snack while waiting, Sliced the deer heart and did some S&P. Heated up a cast iron skillet with some goose fat and began to sear on both sides, Red and juicy inside the taste test, Good stuff! Then some foraging for side dishes. First a couple hen of the woods mushrooms, Then foraged in the garden and picked the salad. Three types of lettuce. Getting closer to the main meal the mushrooms were cleaned and sautéed , The deer again pulled and oven cranked back up to 425 uncover meat and return to brown again, This done meat pulled, The pan juice strained and reduced for a sauce. Salad built and everything plated up. As we ate we discussed how good yearling deer are and how we should harvest a couple more. Dinner finished Pat says hey I want to back and hunt this evening. I said got for it I will finish up picking meat off the bones. She gets ready grabs the cross bow and heads out. 4:25. I pick meat and before I can get it into the fridge I see Pat walking back carrying the bow in one hand and arrow in another. What's wrong I ask? Nothing she says I just shot a deer! Are you kidding? Nope 5 minutes after I got there two came by, Darned if she didn't shoot the heart into messing it up .Life is good in BilletHeadVille, BilletHead

    Roasted butternut squash soup, Good day for making and eating. Rain and mid forties. Roasted two big squash and scooped out six cups out of the hulls. Other things in there included onions simmered in butter, chicken stock, thyme, pure maple syrup, heavy cream and half an apple. Of course I made one heck of a mess but all was forgiven when the Mrs. took her first spoonful when she got hone from work . Its that tie of the year for more soups and stews, BilletHead
