Ok what's cooking at the BilletHead's today? It literally is cooking right now and is smells pretty darned good here right now. So this character Terrierman brings this dish to JigFest. I should say bowl instead of dish because it is a soup. I was hooked from the first spoonful. Thanks Rick! The recipe I have calls for three different dried chilies. Took looking at two places in the metropolis of Springfield to get what I needed. Anchos, mulato and guajillo. Here they are stemmed , seeded and toasting, They were then put into warm water to reconstitute. When this was done they were taken from the water and blended until smooth with garlic and a bit of soaking water. Then there is browning of the protein. Meat of choice? Venison of course. Doing it's thing in some goose fat, After browning meat pulled and brown bits loosened in bottom of browning pot. Meat and chili paste returned to pot with Mexican oregano and five cups of water. This is simmering until meat is tender under a lid, More will be coming in a few hours , BilletHead

I ran into a pretty strange thing myself while at the Bass Pro outlet in Springfield. I know Bass Pro and Cabelas are one and the same now but Found a Cabelas brand return in the Bass Pro outlet. BilletHead

Yes John did but I am not sure how much he really got to eat because Mrs. Folly, Mrs. BilletHead and I got some off of his plate . Kind of like a buffet at our table. A very talkative buffet! BilletHead

Pretty funny Donna G. I wondered that about Mrs. BilletHead for awhile. She as you do with your Champ likes to Fish but Fly fishing is our vice. We used to discuss if she had more shoes than we have fly rods. Now I see less shoes in the pile and more Fly Rods being accumulated. I don't say anything when she wants anything, nadda, nothing at all. She doesn't question me about fly fishing or fly tying gear as she thinks we may need it. Got her fooled about that , BilletHead -
Been a pretty good day, Got a text from JohnsFolly. He invited the Mrs. and I to meet he and his clan minus one to have lunch in Springfield. Went to eat Chinese at recommendations from FlySmallie and another forum member (forgot who). Met them for a great meal and visit. John and his family are a hoot. Nice to be included in the circle of their friends as they are ours. We all ordered different meals and shared with each other. That way we all sampled a variety. Thumbs up from the BilletHeads. John took some pictures , I got one of him but it looked like he was in a stupor but he wasn't so I will spare you that. I will let him catch up here when he gets back. So with full bellies we did not want much for dinner here at home. We decided on a salad. Wanted to make a ginger sesame dressing from scratch. Ingredients in the dressing called for tahini. To be fair I actually did not know what tahini was but when I found out I said hey no buying it since we are going from scratch we will attempt to make it. Make it we did! So we made the dressing. Homemade is always better and it was a hit on the simple salad of romaine, thin sliced red onion, halved cherry tomatoes and a few croutons. A mighty tasty salad and the dressing will be used on other things like a topping or marinade on chicken, duck or pork, Again good day for the BilletHead's

MoPanfish, Looks pretty good. I have seen you incorporate coke into many of your dishes. Never tried that. When doing carrots I go no farther than baby or large carrots sliced and cooked in a double boiler and add some dill to it. BilletHead
