    What's Cooking?

I think you will be really surprised with the venison and duck. So much more control and perfect to your taste. Some of the guys here seen to very perfect accomplished chefs and make no mistakes and have the perfect doneness without sous vide. Me on the other hand get distracted and am not perfect. There have been a few times I would say boy I wish I had taken that off a few minutes quicker. We cannot undo what has already been (over) done to our liking. Sous Vide helps me edge closer to perfection. As far as pre searing and sous vide I have read that too. Some of these recipes call for searing it another time when taking it out. Have not gone there yet. Seems redundant but again never tried it. Looking forward to your other dishes, BilletHead

Lancer, I checked my unit right off the bat. Right on. Are you searing really, really quickly? I have had only once seared too slow and it changed my finished item a bit more than wanted. On the Prime rib I did it said to even let it sit and cool some before finishing the outside in the oven to prevent any change in doneness. Speaking of I have been shaving the leftover prime rib thin then heating some with sharp cheddar cheese. A bit of horseradish sauce on a bun and then piling on the hot meat and melted cheese. The best roast beef and cheddar sammies I have ever had! BilletHead
  4. You are an easy target . Quit your griping and just be happy. You are beginning to sound like Mrs. BilletHead gets once an awhile. Boy I hope you don't have her phone number ! HA, BilletHead
  5. Airgun or airhead. What's the difference?
  6. From what I heard it is using coyote hunting for an excuse to poach turkeys during daylight hours. Turkeys are pretty vunrable to high power rifles that time of the year being out in the open during courtship. Your comparing it to night time turkey poaching is way out there but you are too at times. Daylight or night.
  7. Where did I say anything about hunting turkeys by moonlight?

Thanks it helps the rest of us on the learning curve. I have been looking at different charts for pasteurizing times and temperatures. BilletHead
  9. Oh my this brings back a memory or three, Ya, ya don't ya know. Eh, oh jeeze and jeepers! This gave the Mrs. and I a look back to one of the ladies I took out for reeling and healing. A small Minnesota gal. Stage four participant. She and I paired up on the last day. We also were the last ones to come in and they had to force us off the stream. What a hoot! Love it! BilletHead
  10. Eric, You are such a tease, BillletHead
  11. Ketchup. Coyotes are breeding now. You can hunt them year around but they are closed during daylight hours for a short period of time. Why then? To protect turkeys. Seems some people use the excuse of hunting coyotes to kill extra turkeys. Check it out here, https://huntfish.mdc.mo.gov/hunting-trapping/species/coyote/coyote-seasons-hours You can hunt them at night but without a light. You ever been out with snow and moon light? You can see pretty well, BilletHead

  15. Before the inch of rain here in BilletHeadVille over the weekend we had six clear inches, my buddy north of here a clear eight. I was looking for a place to open up a small hole to goose hunt over for tomorrow this afternoon. Did not have this drill with me but walked on edge of pond and couldn't chip to water . So warm wind tomorrow then a big change with a low of nine this Saturday night. They have been ice skating in town. Rare will make me happy once and awhile, BilletHead
  16. We were laughing so hard the Mrs. Could hardly take the picture! Got the auger for half price at the Bass Pro outlet and it even has an adaptor to use a rechargeable drill. Surely this weather pattern will strike again in the next few years and if I live long enough I can do this a few times. The BilletHead has so many hobbies but another will be OK. Wrench you old scrooge go shoot your BB Gun. BilletHead

  25. The BilletHead is selling two layouts, Need room and something has to go. No rips or tears. Flagging zippered holes on each side. Zipper at foot for cleaning out. Easy build and fold up. These two are what we started with. Field hunting and around ponds and lakes. John P. Has hunted with me out of these. 50 bucks each or 80 for the pair. I may be looking to moving a dozen full body lesser Canada decoys too. Trying to make up my mind on those. Thanks for looking fellows, BilletHead
