Al Agnew Posted November 21, 2012 Posted November 21, 2012 Guy I know used to can common carp all the time...excellent eating, a little like salmon but actually a little sweeter. I'm sure the Asian carp would be good canned. Mary and I have never canned fish, but we've canned chicken...canned several roosters one time. They were very good, especially considering we hated those danged roosters; it was sweet revenge eating them.

Wayne SW/MO Posted November 21, 2012 Posted November 21, 2012 Great topic! I am assuming you are not filleting if you are pressure cooking?? So you are canning these trout whole??? I also smoke my trout and also make a "tuna salad" like concoction that I also eat with crackers. Could you smoke your trout and then can them??? I used to can rough fish and salmon. I smoked them for about 30 minutes with as little heat as possible. Carp and buffalo are very good smoked and canned. Use them like canned salmon and they end up very similar. Today's release is tomorrows gift to another fisherman.
