Walleyedmike Posted April 26, 2014 Posted April 26, 2014 My asparagus bed is producing quite well right now. I just picked a couple of pounds and will have a bunch ready tomorrow as well. Does anybody have any good recipes for canning, pickling, or freezing asparagus? The stuff I've tried in the past ended up too mushy for me. Thanks! WM

ness Posted April 28, 2014 Posted April 28, 2014 I think JD's right -- a quick blanch in boiling water (2-3 minutes) then pull them out and drop them in a bowl with ice water to stop the cooking. Dry them off and lay them out on a cookie sheet and slide them in the freezer. This prevents them freezing together in a big lump. When they're frozen, pop them into freezer bags. I think any kind of canning is going to require too long a cooking time to be safe, and the asparagus will be mushy. John
