My asparagus bed is producing quite well right now. I just picked a couple of pounds and will have a bunch ready tomorrow as well. Does anybody have any good recipes for canning, pickling, or freezing asparagus? The stuff I've tried in the past ended up too mushy for me. Thanks!

I think you can just blanch it and freeze it. It should retain its texture.

I've never had any way that worked well so I eat all I can and give the rest away.

I think a quick blanch to stop cell growth should not affect it. But it does not take long to cook the stuff. Maybe you blanched it too long.

I think JD's right -- a quick blanch in boiling water (2-3 minutes) then pull them out and drop them in a bowl with ice water to stop the cooking. Dry them off and lay them out on a cookie sheet and slide them in the freezer. This prevents them freezing together in a big lump. When they're frozen, pop them into freezer bags.

I think any kind of canning is going to require too long a cooking time to be safe, and the asparagus will be mushy.

No you do not. It's great grilled. I spritz with a little EVO, a little Balsamic Vinegar and sea salt and that's it for heavenly good Asparagus
