         Looks good chief! I have been told you can eat any fish except smallmouth :) . They are catch and release only. Before you all get your panties in a wad I don't eat smallmouth,

Heck yeah you can eat Smallmouth! It's the best that swims! Tender, white, flaky flesh that is mild in flavor. Just superb! They just tell you that so YOU won't keep THEIR fish! They are eating them, don't be fooled!

In fact, pictured is a 22-inch Smallmouth I caught a couple of weeks ago. It made such a gorgeous fillet! I fried the first half in traditional seasonings and had Smallmouth steak sandwichs. Talk about buckle your knees delicious! Learned how to do that from some east coast guys. Now THEY now how to fix some Smallmouth! 

As you can see, I smoked the other half. Just really good way to really enjoy that natural Smallmouth goodness!

Smoking a brisket this weekend for my little darlings 8th birthday party. The Traeger will get a workout. I'm gonna use Apple and Oak wood and only salt and pepper rub. Should be interesting.

No, we don't eat smallmouth....anyone who does is put on a "don't share any info with status". We are dead serious.

               I and I am sure all of us know that Mitch!    I was just having some fun. Like I have said in the past I love the passion you all have about your smallmouth. They are an awesome fish and I am jealous of your fishery. Love your all's fishing reports and pictures. I have not had the pleasure of fishing with you but have Chief. He is passionate in his fishery and takes care of it like you do yours.

Well we culled two of our older layers this morning. I skinned the one and into the pot, The other I plucked and kept the skin. I split it in half and roasted for about 20 minutes at 425 deg to get some crispy skin. Then it went into the stock pot and covered with water. Also added cut onions, carrots, garlic, black pepper corns. and a little worchestershire sauce and cooked the stock on medium. Still cooking.
