Did you have to blanche the corn prior to vac packing and sealing?  Would love access to a sweet corn field.

Nope just right off the cob. Never had it loose flavor or color. Actually I think it is better than blanched flavor wise have done it both ways. Used to also put butter in pack before vac sealing. Put bag in boiling water to cook. Now just in a pan so to season with S&P to taste as it warms up.

Pretty blessed to have farmer friends who do this planting on a grand scale. Have three that call depending on harvest each year. Still have a bag full of cleaned ears to eat off the cob. Could pick more but when is enough, enough?

Thanks Marty. I was going to ask the same question. I have found that blanched does lose some flavor and the texture is a little softer. Will have to try just straight off the cob if we get any big bunches. Right now just getting enought to eat off the cob in one or two meals.

I gotta go with frozen, but I'll take canned in a pinch.

I've got my corn buyer up in IA right now surveying things. If our stringent quality requirements are met, she'll make a buy and deliver a load to me Sunday :D

Vegan dinner? Well sort of there is butter and a slice of toast involved. Corn on the cob and chanterelles on toast.  When Pat calls leaving from work she will have a plate waiting her arrival,

Really there is a slice of sourdough under the chanterelles,
