    Venison inside loin. Sous vide 2 hours then seared on charcoal with apple wood chunks.

My favorite venison cut. I won't be deer hunting this year. Going to be a heavy travel schedule for the rest of the year😒

When I was Eureka, my students and their parents would provide chili meat and an occasional small back strap. You have to love an Ozark small town.

Between Youth, Bow, Black Powder, and Regular, many of my students lived off the meat the entire Winter and Spring. Those that did not process their own used a Mennonite place two towns over.

               You are right they are the best. I have not got excited until now about going. This meal and the weather have me itching to get out. Busy stuff but I will be going out a few times before firearm season.
