I made this potato salad a couple of weeks ago. Freaking crazy good! I actually roasted the red potatoes and onions on the grill and omitted the celery. I used Kraft mayo with olive oil. 

  • 1 yellow onion, sliced 1/4" thick

  • 3 pounds baby red potatoes

  • 3/4 cup diced celery

  • 1/3 cup mayonnaise

  • 1/2 cup crumbled blue cheese

  • 2 tablespoons chopped fresh basil

  • 1-1/2 teaspoons salt

  • 1/2 teaspoon ground black pepper

I never would have thought blue cheese. That's just what I'm talking about--some new, crazy ingredient that cures the boring old tater salad.

My wife loves this potato salad but I tweek it by adding a bit more whole grain mustard and 1/2 teaspoon of celery seed. It will also need serious salt and black pepper additions.

The other day I went to an Italian place for lunch. They had a buffet, which I usually avoid, but I wanted to try some new stuff so I did it. The star was linguine with clams. Never had that before -- just always got beat out by something else when I ordered. Anyhoo, looked up a few recipes and there's nothing to it. Had a can of clams and some spaghetti in the pantry so I whipped some up and it was pretty good.

I love this stuff!

I saute shallots and lots of minced garlic in several tablespoons of EVOO, then add deck herbs (oregano, marjoram, rosemary, and thyme). Then I add a bottle of clam juice. Once that begins to simmer, I add the al dente linguini and the can of clams with juices. Salt, cracked black pepper, and parsley right before service. The recipe you used - was it much different?

Didn't use a recipe, just winged it. Butter, EVOO, shallot, garlic, red pepper flakes, dried parsley, white wine, and a can of clams and juice. It needed more oomph. Yours sounds better.

           You guys and your potato salad,

 So we started looking for a recipe and settled on German potato salad. Based the rest of the meal after deciding the salad. Grilled chicken thighs. Actually the most flavorful part of the chicken is the thighs in our opinion. So the completed salad,

   Then the chicken getting really happy and as I was watching it I got happy,

   Plated up and of course the fart part consisted of good old pork and beans :) . Some BilletHead BBQ sauce for dipping. A long neck to wash it all down,

   Then there was a pre wash of a deep stock pot by Sadie and she was in it to her ears,

         Everybody came away from this meal satisfied. Right now there is a batch of lemon rosemary shortbread cookies getting ready to come out of the oven. The BilletHead is so spoiled :D. Happy Fathers day guys,

Looks great. Agree--if you want to taste chicken, eat the thighs. Love German potato salad. Shortbread is a favorite too, but haven't had it with added lemon or rosemary but I can see how that would work.
