Todays feast, gosh I hope the plating is ok with everyone? The last batch of cubanelles stuffed were good but these were better. Much better! Stuffed again with Italian sausage but this time store sausage that had some fat in it. We know fat has flavor and more moist not lean like the goose sausage before. Mrs. BilletHead cooked and cooled the sausage before her work day, mixed the meat with sauce, stuffed the peppers and gave them a generous topping grating of pecorino Romano cheese. (I had seen on a cooking show this cheese, kind of expensive but worth it). In the fridge this went for the day. All I had to do was put this in the Bradley smoker before she got home from work. I take orders well and got my assignment done. She got home with dinner cooked, did some skillet baguette garlic toast and plated it up. The cheese absorbed the smoke, peppers hot and cooked but still crispy to the bite. Me and my belly are soooooo happy right now. Also smoked some assorted peppers from the garden for future cooking.

Nice! I think I'm gonna do those Cubanelles next year. They always look so good on here.

I also notice the old-vine Lodi,CA Zinfandel in the background. Haven't had that particular brand, but just drank one -- Oak Ridge OZV -- last week and it was outstanding. I'm usually not much for big red wines, but they were giving away samples so I gave it a try and ended up buying a bottle.

Old vines, whether zin or cab or grenache, tend to produce fewer berries, but with a more intense flavor. Vintners nowdays are often using that as a reason to make wines closer to the old world style. More fruit forward, a touch more residual sugar, less than 12 board feet of oak. I like these wines as food wines. Especially a good Aussie shiraz.

Ok now that my belly is full I will share this before I doze off :)

Spaghetti with grilled summer vegetables, chanterelles and hickory nuts (no hickory so toasted native pecans) . On My this is good!

So herbs from the garden and also from the garden squash, sweet peppers and cherry tomatoes. From the Missouri forest native pecans and chanterelles. Grocery store pasta, onions, olive oil, parsley and parm cheese and garlic too.

While I was doing my outside thing Mrs. BilletHead was doing the inside stuff. Finished product was amazing, bet it would be good as a cold pasta too. There will be boo koos leftovers at the house.
