Been working down the leftovers from Xmas and New Years before our trip. Only new thing was we revisited a PA Dutch classic - fried scrapple. I cut thin quarter inch slices and pan fried in some bacon fat (made bacon if the scrapple was crap-ple😌). Served with some scrambled eggs. The scrapple was fine. Crispy outside kind of mealy and greasy inside. Probably not going out of the way to get more and eat it often. Though I may get some from the Amish market to try a different recipe. Though not sure how different a recipe there is to grind pork offal, season, and mix with some sort of grain and steam into a loaf.

Good call on the bacon 😄

Scrapple seems like one of those things I’d rather have somebody else prepare for me 😄

Oh, and I made a good breakfast. Our beloved Grandma Viola’s buttermilk pancakes and some bacon. Grade B real maple syrup on top. Definitely worth the money.

Absolutely!

Grandma Vi was one of those people that quietly steered the entire family toward good. A strong Christian who never preached. You didn’t want to let her down, not because of the repercussions, but because you just didn’t want to let her down. We all miss her.

So, here’s the recipe:

Grandma Vi’s Pancakes

Ingredients
2 cups flour
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 eggs
2 cups buttermilk or more
3 tablespoons oil

Directions
1. Mix dry ingredients together. Incorporate wet ingredients. Mix until just coming together – some lumps are okay. Do not over mix.

I made a hotdog casserole this afternoon for lunches at school this week. For dinner I did a rib roast with mashed potatoes, sauteed sugar snaps, mushroom gravy for the potatoes and horseradish cream for the beef. I cut the rest of the beef in thick steaks, vacuum sealed them, and froze them. When needed I will thaw them and sear the sides for steaks.

That horseradish cream snd mushroom gravy look fantastic! Oh and a great looking steak😁.

         Thank you Grandma Vi,

 Ness too :) . I got mine cooked up and eaten early and then when the Mrs. Called leaving from work I got busy with hers, thumbnail_0108191732_HDR.jpg
