A couple things I know, make sure the bottle you put the carbonated beverage in is strong enough to hold the pressure and you never really get the smell of blackberry wine out of a room. Learned both lessons at once when a 3 gallon gallo jug blew up in a fishing cabin many years ago. We accidentally made some carbonated blackberry wine one year. I think we hit it with too much sugar when it slowed down but we're still not really sure how we did it. ness 1
ness Posted July 2, 2015 Author Posted July 2, 2015 LOL -- been there. If there's any yeast and sugar left, and you can get fermentation. You've got to let it ferment all the way out and clear, (or use heat, chemicals) before you bottle/seal it or you risk that. If you added sugar to sweeten it up, you probably woke up some yeast and restarted fermentation. Mine's going to be bottled in heavy wire-bale bottles, like below, but also pasteurized when it's at the right carbonation level to shut things down permanently. John
