Al Agnew Posted July 16, 2015 Posted July 16, 2015 Groundhogs basically taste like squirrels, but modified by what they have been eating the most. Young ones are pretty tender and they are (surprisingly) pretty lean meat. I've never tried to eat a really old one...I suspect that like squirrels they are tough.

We found a couple of dozen, but that pales in comparison to what everyone else on this thread is finding. We did use them in a white wine sauce and put that over venison backstrap medallions.
