On the subject of bbq, I was always disappointed in my own bbq so I went to 3 classes put on by Chris Marks, an 8 time Amercian Royal Grand Champion. Learning from BBQ Pros is a lot like hiring a proven guide to show you some Table Rock fishing skills.
There a number of places around the country that serve great bbq. The key is to find the spots that serve competition quality product all the time.
One place that is not too far away that is worth a small detour when you travel east is Mike Mill's place in Murphysboro, IL. He was four-time World Champion and three-time Grand World Champion. http://www.17thstreetbarbecue.com/Menu.aspx They cook over apple wood and the sauce is a mustard based solution of greatness.
Another outstanding place that is in Kansas City atJoe's Kansas City...formerly known as Oklahoma Joes. They have competition quality product and I specifically recommend The Z Man Sandwich which is bbq brisket covered with smoke provolone cheese and onion rings http://www.joeskc.com/
