Buck, Schrade, and Ka-bar have steel that I like in a working knife. I do have a Puma that is a great squirrel knife, steel is harder than any other knife I've owned....you can grab a stick and smack down on a squirrel leg and it cuts it clean, no harm to the edge at all.....but sharpening, when it actually needs it, is a lengthy process.
For filleting and for all purpose kitchen (food prep) stuff I love the common wood handled Rapala's and American Angler electrics.
My EDC is a 5.99 Ozark Trail folder, it sharpens easily, clips on my pocket, and just fits my hand good. It opens boxes, cuts hose and strips battery cable.
