    I love BBQ chicken. Not slow smoked but grilled and browned over a medium fire and then sauced with the sauce browned a little too. Got it going right now. Some potatoes browned in butter, sweet corn and a green salad to go with. Life is not what you could call difficult.

    Colorado

    Going to Colorado for three weeks this summer. Leaving June 28, home July 18. Travel trailer deal. We're going to Mesa Verde first for a few days, then Durango and then Gunnison, coming back by way of Colorado Springs and I-70. I'll have time to explore and fish at all of the above. Recommendations sought. Will probably do a guided trip near Durango and one near Gunnison. Experience there would be helpful too. Thanks!

    What's Cooking?

    The last brisket I did I had the egg at about 200 and the whole brisket on for about 12 hours. Rubbed it a day before. After it was done, I put it in foil in a cooler overnight. Put a cup of cabernet and a cup of beef stock in the foil pocket and warmed it again on the egg because the oven was full with other things. I don't know what temp it got to but it disappeared.

    Far from grossed out. Duck ham is one of the finest things I've ever tasted. I didn't make it, got it at farmers market. Spectacular is really the only word. It looked like yours, sold in whole breasts with the skin on.

    Well tonight it's the polish with kraut and apples. About an inch of kraut in an enameled Dutch. Good big shake of caraway seed mixed in the kraut. Two Braeburn apples peeled sliced and cored. Enough to make a second layer. About 1 tbsp. brown sugar crumbled over the apples. Two pounds of Johnsonville polska kielbasa in two inch chunks. Enough to make a third layer. Lid on and in the oven at 325 for an hour or so. Assume everyone knows how to make mashed potatoes. It involves peeling potatoes, boiling same, then milk, butter, salt, pepper and if you like things that taste good, some fresh garlic.

    I still haven't made the polish with kraut and apples. Right now Chili is melding. It's getting late now for dinner so I am thinking huevos ranchera in the morning. Brought in four jumbo eggs from the hen house today so I thimk I might have a plan. Plan was executed. Hashbrowns instead of tortilla. Worked.

    What's Cooking?

    Tri tips are a great way to feed four or five people with one good cook. I bark mine both sides on the komado joe running hot. Then I set it off the fire and choke it down to almost nothing. Maybe 25 minutes start to finish on the grill, then let it rest about 10 minutes. Slices medium to medium rare to mostly rare cut cross grain about 1/2 inch thick cooked that way. Any good rub is good. Sauteed mushrooms are a great topper.

    Tomorrow I am going to bake polish sausage with kraut and apples. Make a side of garlic masher potato. Maybe some sweet corn too.

  19. How are you with snakes? I've done some pretty mischievous things with a good rubber snake.
  20. I had no idea you were such a fraidy boy.
  21. The alberto won't do that to you. If you tie it wrong it won't ever snug up. And once it does, it's a very good knot. It's not easy for my old eyes and carpal tunnel ridden hands to tie, but I have it down pat. Just takes me a little while to get it done. Worth it though.
  22. It is very good Irish. If you like and appreciate Black Bush, which I do not doubt, you absolutely positively owe it to yourself to make the next Irish purchase to be Red Breast. 12 is awesome and the older the better of course.
