    What's Cooking?

I think I’m a pretty lucky guy because Kathy and I just work well together — in the kitchen and everywhere else. She dragged her waffle iron over and this morning we made some dang tasty waffles again: Then this evening I scratched my Cajun itch with a shrimp etouffee. Shrimp seasoned with paprika, thyme, oregano, onion powder, garlic powder, white pepper, black pepper. Sautéed onion, celery and pepper in oil and butter until soft. Added remaining spice mixture and flour, tomato paste and then chicken stock. ‘Who’s your sister’ sauce and cooked until everything was just right then added the shrimp. Served over rice with some hot sauce for me. Darn tasty, if I do say so myself.

This talk discourages the superior side-angle shots. Shame on you two! Seriously you guys crack me up scouring the background in the pics 😀

Thanks for the history. I’d call this a top 5 for me. Hard to name a favorite. I recorded this from TCM a couple years ago but hadn’t watched it recently. I enjoyed the TCM commentary. I guess Ford tried to get the movie made for years but couldn’t. Agreed to do a western —Rio Grande — in exchange for consideration of this. The Cowboys is a great movie with great music. I remember hearing John Wayne told Bruce Dern everyone would hate him for what happens. Haven’t seen The Shootist in many years though I need to.

Been a couple years since I watched this one. ‘Tis the season ☘️
  5. Yeah, I think they’re pretty easy to catch too. On the quest for a CO River Cutt I caught something like 75 brookies.
  6. Me too. And I’ve been wearing the same clothes for a week and my butt itches. 😄
  7. Heard something the other day that stuck: Climate is like personality, weather is like mood. Hit zero this morning at my house. Yesterday was about 10 degrees warmer, but the wind was brutal.
  8. There's that word again...
  9. I like those big-bellied browns and the shots where the fingers kinda smoosh the gut in a little.
  10. I agree, and these fit the bill
  11. Blue River, which goes right through town, should be running pretty high in June. Plenty of easy access. Watch out for these: I walked right up on these two just outside town.
  12. That looks good. I think guy in the video was using something heavier. Just didn't look like it wanted to stay in place. I watched a second trout crack video and the guy used mono and it was a better tie overall.
  13. Has anybody ever used monfilament tying thread? I didn't like the way that was laying down on the hook and sliding around. Kind of a sloppy tie too, IMO.
  14. For a #12, I'd use 1/256,000 ounce of dubbing Seriously -- get the thread a little tacky with the wax, and add just the tiniest amount of dubbing in as even a layer as you can for about an inch. Kinda roll it between your thumb and index finger. Wrap it and unwind/repeat if necessary to get the thickness you want. A little trial and error and you'll get there. I wouldn't mess with a loop, because I'm not too fussy.

    What's Cooking?

Using what I’ve got and keeping it healthy...cod filet with lemon pepper, zucchini and onion sautéed, and lentils in chicken stock with a bay leaf. About a tablespoon of vegetable oil to make all this happen. It’s a repeat with different protein.

    What's Cooking?

Oh I’ve got stuff from back in the days when I was doing sports and senior pics when my kids were in school. Mostly gathering dust now.

    What's Cooking?

Lighting makes a big difference in pictures, and natural light beats indoor light hands down. That's why I often carry my food outside for pictures. That, and to give you knuckleheads more chances for tired old jokes about my deck rail. I also do pics on my kitchen table with light coming in the windows. Not as easy to find natural light this time of year though. I like a lower angle better than an over-the-top-shot. And, if the picture is of food, make it fill the frame. I almost always process them a little too -- straighten, crop, adjust exposure. Not a fan of heavily boosted saturation or contrast as the pictures look unnatural, but a little bit can improve things and help colors differentiate some. I assume about everyone is using a phone to take their pictures, and the type of phone makes a lot of difference. Kathy's iPhone 8 takes way better pictures than my 6s.

    What's Cooking?

Hah! I think we've been through this before. No ketchup on eggs, ever. Stirred into them like Marty said -- blech! This was Louisiana Hot Sauce because you don't like Tabasco

Can't say I know what the rules are, but I think fettuccine was the right call on that one. Can you share the secret for the cream sauce? That looks plate-licking good!
  22. Great job too to the folks that took such good care of ‘ol Frank!
  23. Depends on you. If you want to wring every last penny out of them, you may have to own them for a while and work on selling them. If your priority is to downsize, maybe you’ve got better things to do with your time. Sounds like you’re not too attached to these guns.

    What's Cooking?

How about a food post? Molasses brined thick cut pork chop, zucchini and onion and lentils cooked in chicken stock. Not the prettiest plate, but it tasted good when I put it in my mouth Breakfast was tasty too. English muffin with butter and strawberry jelly with bacon. And, some creamy scrambled eggs with a little cheese. Love that sammich!
