I really don't know what to suggest. I have only had one done thinking I may never get another like it and to this day haven't . I opted for a flying bird so I could see the most of the bird. Thanks Richard, I knew this I just have to poke once and awhile to those who have a disdain to eating wild so to say. I do roll the proverbial dice once and again and I do eat ground meat. Actually I love a burger king whopper . Have bought the best grind done in house at a shop of burger and grilled to medium rare. Bought my own cuts as you mentioned and ground my own for same purpose. I check my game really close because as I say I am going to put into my body. We got a mallard last weekend that had "Rice breast". I had seen pictures of that. It looks like the little yellow grub like fish get and actually I bet it is. BilletHead

Found something else new to the BilletHead's, So a couple weeks ago was at Sam's club. Seen some tortilla chips seasoned up with Tajin. Never heard of it so we bought a package. Dang! Googled the stuff up. Been looking for it and finally found some. Going to be many possibilities for it. The worst thing would of been the bacon on the dove. Lets see 7.5 pieces of bacon. We did not eat it all. Four dove left = two pieces of bacon. That means between the two of us we consumed 5.5 slices of bacon. That and a little butter in baked potato and sauce I think we did pretty good for the total of meals. Dove was just a snack. Breakfast was a small bowl of homemade granola cereal. BilletHead

Yea memories, I will tell you one from a young BilletHead buffoon! My sisters and I made a wall of snow at the bottom of a hill. The plan is I would ride the sled down the hill and crash through the wall of snow. It all went well until I hit the wall and it stopped me cold. I seen stars and am lucky I did not break my neck. Oh I just had an epiphany ! This might explain my current mental status. 🤪. It takes guts and that altered mental status to admit something like this...................., BilletHead

Cooking for the day and week, Just not a lot to do today and not enough snow for a snow man.😃 Might as well cook. Took out a limit of dove out of the freezer. Filleted meat of the sides. Mrs. BilletHead took a jalapeno slice and sandwiched it between sides then wrapped with a half slice of bacon. I had the coals ready with some oak wood on it. On it went, While I was babysitting this the Mrs. Started another pot of potato soup. Yesterdays was so good we needed more for the week. Dove was ready to pull, Time to snack, A deer back strap loin section was thawed, seasoned and slipped into the ready sous vide water bath, There had been dough made and resting then filling for more goodies. So Bierocks began to take shape, When the sheet pan was full they were put into the oven and soon, We took a break and watched some of the game until it was time for the meal for today. Out of the sous vide bath and seared, sliced and plated up. With the pan drippings made orange marmalade sauce for the meat. Half a baked potato and salad. All is well here in BilletHeadVille, BilletHead

One of those days soup would be good. Mrs. BilletHead dove in and made a big pot of potato soup this morning. Straight up noon I devoured two big bowls worth. Grazed and snacked first part of the football game. Half time it was nachos and a brew . Might do a real meal tomorrow. BilletHead

Pipian Rojo, I made Spanish rice and refried beans for the side. The protein was chicken of the trees . Without my sous chef Mrs. BilletHead it took awhile to prepare. She will get a good meal when she gets home from work and inherit the mess I made today. If I would of had a free hand there would of been some preparing pictures. https://honest-food.net/pipian-rojo-recipe/ I had part of the dried peppers but did have to go to town for the rest. Lady at he grocery store check out freaked and asked me how I could eat hot peppers. She would have nothing to do with me explaining these were flavorful chilies that I would strip out the seeds and blister to bring out that flavor. Yes they can be very slick but these have the tractor soles and it is better. I wear them after being in waders when I am so stiff and back is hurting more than usual. I can step out of waders and slip these on and not have to bend over to tie shoes. BilletHead
