Cajun Dirty Rice, That will be at the end of this cooking installment. I like a few cookbooks. One writer/cook in particular, Hank Shaw. I had three of his books. Hunt, gather, cook and Duck, Duck, Goose and finally Buck, Buck Moose. Book one covers just about anything including fish. Second Book waterfowl and the third venison including bigger game. There is a forth book dealing with small game. Pheasant, Quail, Cottontail. includes all type of upland birds too including turkey. i was on the fence with the fourth book and decided to pass on it. Our OA member friend Johnsfolly I got interested in Hank Shaw and he even got to meet him last year and get the Buck, Buck, Moose book at one of Shaw's signings. Much to my surprise John sent me a photo, Mrs. BilletHead and I got to meet the Folly Clan at Bennett for a visit last Saturday and I got my Gift. I personally have thanked John and I will do it again publically right here right now. Nice to have friends of this caliber. I had my nose in the book for the two and a half hour trip home while the Mrs. was driving. Eyes wide open thinking of the dishes that will be tried. With the turkey opener the following Monday I paid particular attention to this bird. Got my turkey on the opener and while breaking down the bird I was eying the innards. The giblets and Offal. I snatched out the liver, gizzard, heart and even the fries. When done cleaning the bird I packaged the wobbly bits in a bag minus the fries. These I split and dusted in seasoned flour and fried the little jems up in some chili oil I had made last winter with my dried Tai peppers. I found them a neutral flavor. Interesting snack is all I can say. Still thinking about my new book I started thumbing through the pages again. Got to the Cajun Dirty Rice. Used my turkey inside goodies for the base, Ground Venison for the rest of the meat. Then there are hot peppers, garlic, onion, green onion, bell pepper, celery, Turkey broth and the precooked long grain rice We did earlier today. Hot dang. I have decided boxed dirty rice that I thought was good really sucks , Dinner is served, Used to save the wobbly bits for our Sadie dog. Tuff luck puppy no more. BilletHead

Thanks John. Cows were on the other side of the field for me yesterday. Those bovine will come to turkey decoys much better than a turkey will. The ultimate oxymoron when hunting in turkey season. Tho1mas, I have been lucky more times than good. We really got things stirred up this morning for Mrs. BilletHead's hunt behind the house. She understands but i feel like crap about it. It is hunting and not killing right? BilletHead

Pry all those hooks back out of all those poppers. Get you some balsa. I will help you from there. Do you see any seams in the fry I put in the box? I know, I know but you asked , BilletHead You are worrying too much. The Bass won't care man they are going to eat those poppers just fine!

Yes people it was a cold opener, A little windy also. No real scouting this season. Just knowing what I have learned hunting in BilletHeadVille for many, many moons. Where they typically roost, fly down and feed. Really fortunate to have lived in one place and be able to do this. First off I bought one of these and think it may of helped. I know it could be dicey using it to some of you here. i would never try on public ground. I am not a crawler and with a bad shoulder sneaking is pretty much out of the picture, Set up behind the house. As I set down I could pick out four hens silhouetted in the trees. Put the decoy in front out of me. I was told to keep it within arms length in case I needed to grab it. I did not and it was maybe five yards from me. I heard two toms, one close and the other pretty far off. Hens talking and even seen one picking buds or small leaves off the tree she was in. Soon the close tom pitched out. Not to the place I wanted in the field cut but straight down to the ground under his tree in the really thick timber. I mean thick with multiflora rose. The most nasty timber I have ever been in. All the other hens followed except for two that pitched in front of me. Soon they went into the timber with all the others. He gobbled a bit more and seemed to fade farther and farther away. Hummm I thought. After a long wait or so it seemed long to me I heard another gobble and decided to move where I was in the timber where i could watch a pretty clean fence line. I grabbed the decoy, made the move to a more comfortable tree to put my back to. This time I put the decoy right in front of me. Had not been there for five minutes and I seen a head bobbing up and down a Tom head I turned the decoy towards the coming bird and got behind it. Then he seen it and instantly went into a full strut. This was my cue and I lowered the gun and that was that. Bang your dead. Hens I had no idea were there went berserk going everywhere. That was just how thick it is in there, Nice pair of spurs too, Hung the scales and weighed him, Longest beard fibers going slightly over 10.5 inches long and spurs 1.25, By far the toughest turkey i have ever skinned. That or I am getting weaker, That or I am old, maybe a combination of both . BilletHead

Thanks Duane so much for sharing the trip and hunt with us. I like the Rios. Never had a chance to hunt them but when bow hunting pig and peccary in that part of the country got to see many of the Rios. They stand so straight up and look really tall, BilletHead

I will be out in the AM Ketchup and the take the Mrs. out Tuesday. Saying wind chills close to 20 here in BilletHeadVille. Going to dress warm and not walk too far so as to not sweat and make me feel even colder. See what happens . Got some jakes behind the house. Something tried new and then simple fried walleye, I have been eyeballing the dehydrated chanterelle mushrooms in the pantry lately. Wanting to incorporate them into a meal. When rehydrating mushrooms they can be leathery and tough. Today the toughness will be literally beat or ground out of them right into a powder, Fine enough it was like fine flour. Mrs. BilletHead sliced up some potatoes into wedges or steak fries. I tossed the taters with some olive oil, S&P and then she dumped in the mushroom powder. This was all put into a skillet, Skillet put into a preheated 350 degree oven while the fish was cooked. The walleye was dusted in plain lightly seasoned flour. I was wanting to taste walleye not a coating. She fried this quickly. I pulled the taters and they smelled good, Plated it all up and had a side salad. Mighty good, My head is spinning with possibilities with this powder. In scrambled eggs and maybe adding to bread dough . Unlike Morels which I have never had too many to use. Sometimes chanterelles can be so plentiful the saying you have so many they are running out your ears can be true. I have left chants in the woods not picking them. Not any more, BilletHead
