Nice Lancer and sounds like a good honeymoon. We think it is about time you married this pretty lady, Mr. and Mrs. BilletHead
  5. I suppose if they are baggy enough JD they would get their little fangs caught in the material and not you. This being said I bet you will have a sidearm and bird shot ready for them snakes. I hate ticks too but generally I can see them it is the chigger infestation in neither regions I dislike worse, BilletHead

    What's Cooking?

Oh boy more things to try in the cheese world. I did take a smell of a Limburger cheese in the sealed package yesterday at HiVee. I could smell that stuff through the package! Wooooo. I might try it sometime though. Still learning about the pairing with other foods and drinks. That will take time. Found this a couple weeks ago. Who would of thought there were so many cheeses. Overwhelming, http://www.cheese.com/alphabetical/ BilletHead
  8. Funny stuff right there but get this, My Mrs. actually picks berries in her waders. Old waders . I just spray her around the top and works real good for chiggers and ticks plus she stays dry in the early morning dew. They are marked so they don't get taken fishing, BilletHead

This was in jest John! I have learned many things from you and all on the food threads. I am still perfecting the perfect grilled cheese. Hey speaking of cheese we are checking out different cheeses. I really like blue cheeses and have been buying varieties of the moldy stuff. Could not find roquefort close to home and asked my friend from St. Louis if he had ever seen it up there . Well when he and his bride came down to visit and waterfowl hunt he came toting what I think was a quarter wheel. That is amazing cheese. So what is every ones favorite cheese. What else should I try? BilletHead

    What's Cooking?

Got to know duck skin is in and fat is where it is at! There will never be the amount of fat that is on a domestic duck. On wild birds if I can see the color of the meat through translucent skin it comes off and the skinless breast meat will be cooked a different way. When there is a thick fat layer I will cook it and enjoy the burst of fat with every bite. Be not afraid Ness the enchanter I mean Dickweed let the meat be juicy and red flowing with tasty goodness. Let it rest after removing off the grill. Pour another glass of wine and be patent. If you decide not to grill here is one of the places I learned to pan sear, http://honest-food.net/2014/12/15/how-to-cook-duck-breasts/ Read this buddy. You will see where I left the "tails of skin" as much as I can on every duck I clean. If you choose to grill over charcoal I just guess timing for being cooked. Sear on the fat skin side, flip, cook a bit more on opposite side and then stand the breast on the side vertical (largest side) a few seconds more. See here yes I am a bit worried and want this to be perfect so you can keep the teacher you are cooking for happy! BilletHead

What Gavin said. I may add that that same sear on a charcoal grill will be even better. Please tell me you did not skin those prime pieces of meat? If so you need to make a trip down to BilletHeadVille and let me do the cooking BilletHead

RIP gentlemen! Also been dealing with government today. Looking for a solution to a problem. From one branch of government to another. Feel like a cheap cut of meat (food related). Now I know how my other buddy (not Biddie) Wrench feels about some forms of that government. Dealing with the department of revenue on top of all that too. Lovely ladies that work there . Not really smiling . Ok Ness answer your phone I have a financial question since you know all the ins and outs about that industry. BilletHead

Old? You got that right especially on those days I feel old. Thought you might of been typing with your mouth full? Hard to understand when a guy is talking with his mouth full of their good cooking. Stop mumbling while you are typing. Answer my question, got beans in your ears? Listen up! Am I turning into an old Biddie? Am I still your old buddy? Spit it out old Chap! . Is it brown, kidney, great northern, or butter beans in those ears? (got to keep this food related) BilletHead

  21. Oh good grief! NOOOOOOOOOOOOOOOOOOOO those fish are so dead many years ago. And they would of had to swim though a hundred acres of pasture to make it to the nearest water:) Never handled one and closest one wizzed past my face but they sound pretty nasty. But like Snagged said I think it would be neat on a fly rod! BilletHead
  22. Yes we can Chief but I think we already have one called the Chat Room. Problem is some of us might be getting in trouble in there. I won't say who though BilletHead
  23. Now don't get me in the middle of this and here is to dear old dad and how I miss him! BUT I know for a fact it was bought at a fish farm not far from my house and WAS transported from Arkansas fish farm. BilletHead
  24. Color me jealous Deadstream, That is way too cool that you get to carry on the tradition. Now here we go on a tangent to variety pack fishing. Still variety pack I guess just another way to do it. Now that we have solved world problems have something to show. Although I do not have grandpa's decoys I did purchase a few years back a modern one. Did some trading and cash to boot for it. Not from the maker but from a go between. Lynn Zwart is the maker. The seller had several varieties of fish types to pick from. I chose a rainbow trout. Although this could be a working decoy it is more folk art to me. Copper fins and leaded where it should be to make it work right., enjoy, BilletHead
  25. Going to be mighty cold in the morning. Bundle up like an Eskimo! Good luck. No more freezer room so i will be watching them out the back window, BilletHead
