After cleaning up and trimming part of the shrooms there will be a swim in Don's chuck wagon batter and then a dunk in the fryer . The rest after cleaning filled five trays in the dehydrator. Decided to pull my trail cameras. Seen a monster buck but I am done. Maybe if BilletHead Jr. Comes up for rifle season he can have a chance at him. Went by one of my favorite hen of the woods trees to see this beast looking back at me . The mysterious old mushroom headed beast, It was a keeper so I invited it home for dinner. BilletHead

You know Ness I kind of liked them. Do want to try different recipes. We are so used to cookie cutter mass produced tortillas with all kinds of additives I am not sure what a homemade tortilla tastes like. Had two more this afternoon with another bowl of the white chili and thought they were better today. Oh and so you all know that was not chicken in the white chili . BilletHead

Well The BilletHead got his buck this morning. Seeing last three trips out the bucks were starting to move. One morning seen five. They were just crossing pastures willy nilly without rhyme or reason. I knew it was going to start getting good. Had some good ones on trail cam but it was to the point I told myself first legal buck I would try for. Raining when I got up so watched radar for the rain to pass and pass it did. South West wind was in the next couple hours going West and then North. No real place to sit with such a shift I knew it was time to go regardless. Went to where I had the best view. The view was nice except for the Angus heard who decided to graze in front of me, And under me, Antler less deer were moving nervously about. to the right of the heard picture is a mixed stand of oaks and persimmon. Out of it ran a doe right through the middle of the cows but kept looking back. It went into timber and right back out through the cows to where it had come from. Then two behind me one way and one the other. To my immediate right a slot. In the Slot coming from the North West is a buck. Far enough I was having trouble seeing the whole rack and if it was legal. It crossed the slot and yes it was a keeper. Took the shot and it looked good. Buck went into The mixed hardwood grove. Cows became alarmed and seen me in the tree. Here came the heard. I slip down and walk to first blood cows in tow, Waited a few minutes and began to follow trail. Sparse at first and then thicker blood. I found him, Thick neck and heavy bodied, 9 points. Rack to me looked dwarfed compared to body size. Tagged deer and went back to house for knives and the ATV. No trailer but my big plastic decoy sled. There was no way by myself with back and shoulder issues I could load it. When back wrestled it around and got it gutted. Put sled on side and rolled deer into sled and tippet it the rest of the way in. Back to house for a lift with block and tackle for a wash out. The shot was quartered away and I had got liver then took out some of the top of heart ventricles before exit. So after that put in ATV trailer backed into garage to another block and tackle to lift high enough to back truck under. Loaded and took to be processed. We have processed two does ourselves but I was not going to do this beast. Too many things getting ready to do next few days. Low on burger we will get back straps cut into thirds for roasts and keep the inside loins. The rest will be ground. Sigh of relief, plenty of meat and no plans to shoot another one. Meat will be shared with family and friends, BilletHead Hope to hear stories success or not from the rest of you!

A good day for this too, A couple of firsts for me. Homemade tortillas and white chili. Got the meat cooking and as it simmered it was making the broth for the soup. While this was going on I made the dough for the tortillas and separated it out. Let it rest for an hour. Picked the meat for the soup off the bones and worked up the veggie part of the soup. Got to pressing the dough and as I did pitched the previous flour disk into the cast iron skillet. Added the meat broth, more spices and meat into the pot, with lid ajar partially covered the pot to simmer. The tortillas besides the three I ate began to pile up. Chili had simmered up long enough time to try it, Tortilla too. Really good. I have some tweaking to do on the tortilla recipe and getting better at the press and desired thickness. This dough was flour, salt, baking powder, water and veg oil. Next batch I will use a fat like lard or better yet goose fat . BilletHead

For hours spent and more wear and tear on my body I would be ahead buying my protein. BUT I would not be in the outdoors enjoying what we have been blessed with or eating better heathier meat . BilletHead

It was a pretty good one to boot! It was going to be a quick hunt this morning. Grand children here for a visit. Mrs. BilletHead was making a big breakfast. So I go out. It's youth firearms season so the blaze orange was worn. Great morning light wind out of the West. Pretty good wind for my chosen stand. I see three slick head deer with a forky horn dogging them. Bucks are beginning to get frisky. He abandons the chase fading one way and the does the opposite direction. Wood ducks and white front geese flying. Another Fork horn shows up and eats acorns beneath me. 300 yards to the South out of the big timber shows four turkeys. into the field they come and I get a text from Mrs. BilletHead. "I am starting breakfast." . They work sort of my way to within 100 yards but begin to turn East into a slot of open ground between the timber and a cedar thicket. Crud I thought. The four birds, all adult long beards were out of my sight for ten minutes and then appearing at my side of the cedar thicket 50 yards away. Picking at weed and grass seeds they messed around. Another text, "Hey biscuits are done and frying bacon" I was afraid to move. Shot a text back "I am in turkeys see you soon". Closer they came I popped off the safety. One stepped over the 30 yard marker while the one behind it finally seen the blob of orange in the tree. It started the put, put, put alarm call standing erect. By this time I had the bow up and turkey in my sights I pulled the trigger. Contact the bird took off half flying half running feathers flying all the way to the pile up a mere eight yards from thick timber. After forty years this is my first archery turkey. A couple of shots and near misses in the past. I text home "hey guess what I got me a turkey" Text back "well breakfast is ready bring dinner home". 18 lbs.3oz. 9.5 inch bushy beard, Breakfast eaten and good by to grandkids the bird was cleaned. .This afternoon A half breast was sliced and coated with a spicy batter. Fried up it was and I grabbed and plated me a few pieces. Some chunky blue cheese dressing plus some franks red hot sauce. Salad from the garden. A great meal to eat while watching the football game, The BilletHead had a good day.

Two things going on here today, First off pulled thin sliced Canada goose from the cure for jerky. Put in the smoker for three hours, then taken off smoker racks and put on dehydrator racks to finish off. this afternoon grilled deer back strap roasts. Pat made a cherry bourbon sauce to put on them. A big pile of sweet corn and salad from the garden. The 13 and 14 year old grandchildren are here scarfed the meal down. Gave them a sample of the jerky and they are pacing the floor ready for more, BilletHead

The yard pets are reeking havoc, We have a crabapple tree close tot he garden. As the apples fall deer vacuum them up. Off and on all day and for sure all night. We have taken two does out for eating but a guy can only eat so many deer a year then add all the other harvested game in the mix. Don't mind sharing a bit of produce but it is beginning to get nuts. They prefer the crabapples but when they are cleaned up they hit the lettuce. So far just working the far edge away from the house. This is a mere 7 to 8 yards from where we sleep on the screened in porch. Last night I was awakened to crunching and munching sound at 1:30 Am. Could also hear the sound of the cattle panel laying flat across the lettuce bed. I sat up and could see the deer as bright as it was with the bright moon behind the clouds. Pat was now awake as I got up and too the screen to say hey deer go away. The deer raised its head and then trotted away. Could see a couple more farther down in the yard. Took a leak and laid back down. 5AM alarm went off, pretty loudly too. I sat up and looked out , cloudless and bright moon really illuminating the yard. Five yards away under the closest dogwood tree was two more does browsing on the leaves that are falling. They had mowed off almost have the bed they could reach and worked over a couple self wicking planters. What they did not get bit off they pulled up, This afternoon we arranged some panels creating a partial fence. We like our deer and feed them as they feed us. The deer do not even interest the old dog Sadie anymore. She goes out and ignores them. If they are not close they ignore her, BilletHead
