Cut into 1" sections, poach, remove meat from bones, use meat as you would crab for crab cakes, or meatballs. Use lots of lemon zest because they have an oily taste, similar to mackerel

Or maybe if you're lucky, the gar won't bite and you'll have to pick up a roadkill armadillo on the way home.

After all the "Ermergerd they're so delicious" talk I almost took one home to try it. But then as I was trying to figure out how to put it on a stringer I changed my mind. No regrets there.

You joke. I know a cajun that still does that. If the meat is still fresh it's going home with him.
