TRRANGER Posted December 19, 2014 Posted December 19, 2014 I have found that if you slow your cooking down, lower your temps and cook it to a med rare to med it wil be tasty and tender. And I agree season lightly let the deer taste shine. The bread and chicken fry is good as well.
David Unnerstall Posted December 19, 2014 Author Posted December 19, 2014 I won't use a marinade, then. Thanks for the ideas.
David Unnerstall Posted December 19, 2014 Author Posted December 19, 2014 What cut was it? Sounds like it may have come from the shoulder although I know you're going to tell me it was from the other end. Any who, sounds like I need to make a trip your way and investigate this!! It was from the other end.
David Unnerstall Posted December 19, 2014 Author Posted December 19, 2014 Why do you think it will be tough? I've been harvesting and butchering deer for over 30 years and have yet to have one too tough to eat. At the most all you'll have to do is use a meat mallet on your round steak. And that really depends on how thick you cut them. Please don't marinate!!! Salt and Pepper only! Venison has such a delicious flavor! And don't over cook! That is very key. And we have a mallet around somewhere.....it's just that more people are telling me to go beat my meat, these days. Flysmallie 1
rps Posted December 19, 2014 Posted December 19, 2014 Listen to the French housewives. If the meat is tough, a slow braise in a wine based broth will fix the problem without hiding the true flavors. Chief Grey Bear Posted December 19, 2014 Posted December 19, 2014 You now another great idea for some of the less tender cuts is Swiss Steak in the crockpot. Dang thats good stuff. And I don't know why I didn't mention this as I was making a batch as we were discussing this is Stew! grizwilson Posted December 20, 2014 Posted December 20, 2014 So you give the poor unfortunate the crappy stuff? They grind the whole thing into burger anyway. So no tough steaks. “If a cluttered desk is a sign, of a cluttered mind, of what then, is an empty desk a sign?”- Albert Einstein
