This morning I took some pulled pork out of the freezer to thaw. This afternoon I made a pico de gallo and grilled some fresh corn. Both were added to the meat with black beans and cheese to make a filling for the enchilada casserole I just put in the oven. The rest of the pico will be the dressing for two small avocados that will be our salad.

Hanging and chilling to survive a house remodel in the Ozarks.

Pictures later, maybe.

BH With his caprese salad got me hankerin for a similar salad☺. Unfortunately the tomatoes that I wanted to use just haven't ripened yet. Had to use our ripe cherries.

I love beets, pork chops, and caprese salad.  Haven't had beets in several years.  Used to pickle a lot of them, but just cooked with butter is my favorite.

My wife gets them from the Amish. She gets 5 to 6 lbs for $3! Love them pickled or just cooked with S&P☺.

Beets also make an incredible soup - borscht.
