So tonight I put together a mushroom risotto with a smoked bratwurst. Life is good.

     Working out of my new cookbook and an older one I spied the Bierock. Remembered Ness and a couple others speaking of them. My new book deals with small game and the other all game. I liked the dough and the innards of the new book but did not want to use small game so I chose ground venison that was in the older book. So the Mrs. made the dough as I did the assist. Let it rise an hour and punch it down, another hour punch it down and begin to split  into eight  and roll it out. During all this we worked up the other stuff that would be mixed with the venison. Herbs, spices, shredded cabbage, sauerkraut, onion, mustard, malt vinegar and beer.  Making the dough round flats to be stuffed,

  Can you believe we ate two apiece? Actually easy to make. Says they are good cold and I bet so. Freezes well too. I am thinking two will be going to the turkey blind in the rainy morning tomorrow when I try to call the Mrs. a bird in,

I'm still messing around. I smoked some eggs and sausages the other day. I put them in a jalapeño brine to age. WOW!!

My early morning task was not eggs. I put together a spicy but not hot chili.

Two pounds seared ground chuck, two pounds seared chopped stew meat (about 1/4 inch size), one large can Cento crushed tomatoes, one bottle Founders porter, a mug of black coffee, two sautéed  diced onions, 5 large cloves garlic, one dried Ancho chile (seeded, soaked, and pureed), 1 Tablespoon dutched cocoa,  1 cup unsalted beef broth, lots of Penzy's chili powder and cumin - about a palmful each, salt and pepper.

All of that will simmer in the crock pot until this evening. Then I will freeze it. Thursday night I will take it out to thaw and reheat it Friday to serve at a school potluck.

Good looking chili rps.  My wife is going make home made lasagna this afternoon for supper at friends house.  Not sure what else will be there except there a couple big bunches of romaine hearts, so I am expecting to see them charred on the grill.
