Well at least that's what I call this one. Maybe spread eagle? Our season opened yesterday and this time of the year is the best for bagging a young one. My eyes have been peeled for just that. Been thinking about this for some time. Well one ran into my scope crosshairs and a pellet to the head took it out. So we will grab some seasoned flour. A number 10 vintage Wagner skillet and a bacon press. Some goose fat too. Preheated the skillet and on another burner the bacon press. Added fat to skillet and coated the squirrel. I had flattened him like a pancake. Ribs just separated at the backbone. Rubbed some of the hot oil onto hot bacon press. Layed the squirrel in and put the press on top. let it sizzle then flipped on its back. Back on went the press for a repeat. Out when golden brown to a plate both sides looking good. Then went about eating. Tender fall of the bone good. ness Posted May 24, 2020 Author Posted May 24, 2020 Grilled chicken salad tonight. Couple different types of lettuce from the garden-a butterhead and a red leaf. Some radishes, carrots and diced beets. Pounded chicken breast thin and dusted it lightly with blacken seasoning. Perty good. BilletHead, Terrierman, rps and 1 other 4 John
Terrierman Posted May 25, 2020 Posted May 25, 2020 Who says bike riding doesn't pay. This beauty is about 14" across. It had engulfed a small kitten. Gave me five quarts of cleaned and ready to cook. Anyone who hasn't had it... breaded (Don's Chuckwagon onion ring mix if you can find it or whatever you can find will work) deep fried it is outstanding. Shrimp of the woods if you will. There will be cocktail sauce. There are two filets thawing right now too. And a nice big broccoli crown is ready for the steamer. Looking forward to later! So. Happy Memorial Day to one and all. Hard to get bacon done but not burned and whatever is wrapped done to perfection at the same time. Baked beans being a notable exception. And they're not wrapped, more topped.

rps Posted May 27, 2020 Posted May 27, 2020 Simple fare this evening. Some of the left over smoked pork tenderloin went into a roasted hash with a poached egg. The salad was made from blanched sugar snaps that came from my porch. ness and BilletHead 2

Smoked at 225, the bacon gets done but never crisps.
