Forgot to post last night. Bacon, broccoli, sour cream, and cheese twice baked potatoes.

My apologies to the purists here, but tonight was ribs.  Rubs have always been my downfall to make, always tough, or dry and usually both.  However the instant-pot thingy has changed that.  My wife puts them.in to cook and an hour later they are ready to get slathered with sauce and a quick turn on the grill to set the sauce.  The sauce by the way is my own special concoction of the last of my original recipe home made sauce, some original Bullseye, as big scoop of brown sugar, a squirt of siracha, and a little chili lime seasoning.  Dang they are good, with a main course like that I had to go all out for a side dish, opened up the only can of Bush's Grilling beans I had.  Now I am laying here like a coyote next to a fresh gutpile, too full to move, .pic does not do them justice.

Try them in an air fryer, done in 20 minutes with a nice bark on them.

   Enchiladas, refried beans and Spanish rice,

       Quick and easy build on the enchiladas. Like the ones my parents served in their Mexican restaurant. Inside these babies is  venison barbacoa meat, onions and sharp cheddar. Tortillas were dipped in enchilada sauce then rolled up. Made a big batch and cooked two. The rest are freezing on a cookie sheet to be vac sealed two to a package for later. (I will do a step by step next time we make them). They are cooked in a slightly oiled skillet or griddle. Since the meat is pre cooked you just heat them up melting the cheese good inside and developing a crust on the outside. Pat made Spanish rice and I refried brown beans.

Steak soup:

Cod with a brown butter lemon caper sauce. With roasted parsnips, carrots and taters. Done cod many times but mixed it up some with a light breading this time. Veggies were delicious too. Need to do them more often. Just olive oil and S&P:85B1E3FD-DBE2-41B1-8E66-FED8FF022FF7.jpeg

Wifey makes great chili. With a side of cornbread. A favorite of ours:
