I was at the school as a full blown dilettante, Most of the others were there to cut 5 to 10 years off the time it took to reach executive chef. Both involve heating cream to specific temperatures. Both a related to panna cotta. Like fry bread, thickened cream desserts are all over the world. N9BOW 1
