Thanks. Yeah -- I've always heard that, but hadn't let it go more than a day or two. I definitely think it helped. Also, the method I used was good. I'd played around with the broiler before in my old electric oven without really getting what I was looking for. New stove is gas and it's taken me some time to get it figured out. Preheated the oven and stone (on the top rack) for an hour at 500 then turned on the broiler to cook them. These cooked about 6 minutes. Left the inside nice and soft with a little crisp on the outside. Just what I was looking for!

Getting that oven good and hot is the key. I don't use a stone, probably should, maybe someday. But I make sure the oven is hot. There is a big difference in an oven that the preheat light just clicked off and one that has been sitting there for awhile in that heat.

Geez, now I gotta go make a pizza.

After an unsuccessful day crappie fishing at LOZ, I did come home with a big hybrid and some smaller ones, so on the menu very soon will be fish tacos.  Hybrid fillets trimmed and cleaned coated with a variety of Cajun seasoning and grilled until flakey.  Let them cool and flake apart to personal preference.  Some small flour torrillias,baby spinach or whatever greens you like.  Mix some plain Greek yogurt with lime juice and lime zest, cilantro and whatever else tickles your tastebuds, just use a gentle hand on the seasonings and taste often.  Smear some of the yogurt sauce on the tortillia, add some flaked fish, and spinach or greens, green onions, diced mater if you want, etc.  I wouldn't hesitate to add a little of that smoky salsa Chief had either.  It's different but delicious.  I suspect made with tilapia wouldn't be any different.  Don't be afraid to expirament on the flavors.

Made a quick bean soup the other night. Run the onion and carrot through the cheese grater to get small, quick cooking pieces. Canned beans, chicken bouillon, diced ham. Less than 30 minutes start to finish.

Communism! , beans need some smoky ham hocks or at least some good ol ham bone for that real flavor.  Not that I would pass up a bowl of good bean soup and cornbread, but I would complain in between spoonfulls.
