Looking delicious. My wife has been doing an asian pork belly recipe when we see meaty pieces like those.

It was good for sure.  But I watched a cooking show last week where they did the real thing.  My issues:

1.  There's no such thing as a sport pepper in any of the grocery stores I go to in Springfield.  I subbed pepperoncini sliced lengthwise.  Still pretty good.

2.  Or a poppy seed bun a little bigger than average hot dog bun.  The one you see is a brioche bun from HyVee.  Still pretty good.  Mine wasn't steamed but was warmed on the grill.

3.  I didn't have any celery salt in the cabinet.  No excuse sir.

The rest of everything else, onions, mustard, relish and especially the tomato would be fine anywhere in Chicago.

I, too, have no celery salt. Nor do I worry about if I have the politically correct bread.

The point is the flavors, the textures, and the appearance.

              Yes, sport peppers are a hard-to-find thing in our parts. I picked and pickled some serranos from our garden. Bingo! Really close to the real deal. Neon pickle relish is another deal that is a mystery item. went with what we had on hand. took buns and toasted them on a hot griddle. This was a good deal as we did not get a soggy bun. Last but not least fellows you really need to acquire and use the celery salt. One word for that gamechanger. 

   Freddys makes a decent Chicago dog, but I was introduced to then at sonic. They were very good and i wish they would bring them back, but we all know made at home is the very best.

I tend to stay away from the "salts" and prefer to use the onion powder, garlic powders, and celery seeds instead. I find that to get the flavor that I want with the salts it over salts the food. Once I have the flavor then I can salt to taste.
