Our Christmas Dinner. Two smoked chickens. Turned out fantastic. Brined for 2 days then stuffed with onion, apple, lemon, and garlic.  A little salt and pepper on the outside!  Have enough for leftover chicken salad and will use the carcasses to make some excellent broth.

   Yummy looking spread there Mitch!

The makings for some Buffalo chicken tacos. Even made the blue cheese dressing from scratch. Pretty darned tasty,

Ah Ness you would like it with the homemade Blue cheese dressing :). You big sissy.  Next thing you know you will be telling me there isn't any rum in the fruitcake.

This was my non-traditional Christmas meal. A Chinese Hot Pot!

Wow -- lots going on there! What all was in that?

We had a tradition in my house of Chinese food Christmas night -- a nod to A Christmas Story, where the neighbor's dogs ate the turkey and the family had to eat at the only place open on Christmas day.

I remember that! When they were singing "Deck the halls!"

The Hot Pot consists of a variety of meats...usually Beef, Pork, and Lamb, thinly sliced, also Shrimp, shrimp or fish "balls". Then mushrooms of all types, enoki, button, etc. Tofu, lettuce, all types of veggies.

There are typically 2 types of water simmering, one with spicy flavoring, one with mild seasoning. So at the beginning, you just have a couple of sets of  "community" chop sticks and put any of the ingredients in one of the vats of water. After a couple of minutes, you have a wire frame little spoon that you take the cooked items out and place it in your plate. Last and best step is dipping the cooked items in your own personal dipping sauce. The sauce is usually made by taking a ton of fresh garlic mashed and diced very fine, adding sesame oil and a little salt, with fresh herbs. They also have a peanut oil based sauce, I usually mix the two sauces together. The heat hot, combined with the spicy hot, is best accompanied with cold beer! I usually have to be carried away from the table!!?????
