Regarding coleslaw mix - I actually approve. Better that than pre-made coleslaw.

Mix vinegar, sugar, heavy salt, and pepper. Pour it over the slaw mix, toss it, and let it stand 20 minutes to pickle.

Mix Mayo, horseradish, and buttermilk (about equal proportions) and dress the slaw.

Just saying ...

Well tater ended up butter, S&P, grated Asiago cheese and some diced jalapenos. Besides our smoked Sharp cheddar I am really liking Asiago cheese on things.  The Mrs. was really impressed with my talent for throwing a potato in the oven for her to dine on when she got home :) .

Yeah, Asiago is good stuff. Just bought a hunk today for a little something I'm making Sunday.

Oh, and kudos on using the oven. Microwave baked potatoes just ain't the same.

Scoop out the tater, take the innards and mix in some butter and sour cream, load it back in the skin, top it with a little cheese and hit it under the broiler until golden.

Close!

Ranch dressing, homemade bacon bits, green onions, cheese, salt, pepper,

Mix all and refill tater. Add more bacon bits, green onion, and cheese to top. Reheat to melt.

1000x's better grilled!!

That is for sure. I slather the potato in butter, sprinkle on coarse sea salt then wrap in doubled heavy aluminum foil. Sometimes use the gas grill outside. A pretty cheap meal. Not the healthiest but good,

Many years ago I found something that goes perfectly with a baked potato.  Medium rare steak, preferable grilled over the coals of a campfire with an ozark stream full of gogglers and smallmouth nearby.  While not a big fan of them, take a big one, stab it full of holes, wrap it in foil and put it in the edge of the coals, turning is as you relax, mighty fine, even if somewhat charcoaled on the outside and al-dente' in the middle.  Throw in some whippotwill and cicadas and live the good life.  Sorry guys just having some withdrawals from such activities.

What's in the foil!

Smallmouth or steak?

Silly Chief, the tater goes into the foil.  Although now that you mention it, might have some frog legs slowly steaming in the foil.
