ness Posted August 29, 2016 Author Posted August 29, 2016 I do a light flour dredge, then fry in a skillet like you. Then, pull it out and deglaze the pan with white wine, add lemon juice, toss in the capers and let it reduce for a minute. Finish with a little butter. I think I talked myself into doing that for dinner tonight. ? John

Flysmallie Posted August 29, 2016 Posted August 29, 2016 Can we go back to the frog leg thing for a minute. What has happened to them? I don't think that there are that many people out chasing them like many years ago. So where did the frogs go?

There is a private golf course nearby that I used to bass fish a couple ponds all the time. They used to grow some big ole fertilizer bass. Until management hired out the grounds maintenance to a separate company. Their workers were primarily Latinos and they caught them netting the lake for fish. They literally netted out all the fish to eat. The following couple years the bull frogs exploded on those ponds. When you pull up to the ponds there are literally thousands of them all over the place. The Latinos apparently don't like frogs though.

I would have never thought that quality of food would come from a place like that! Not banging against a Pub, but a Pub in a new shopping center in the middle of suburbia on the edge of town. Too much fert and pesticides. And frog eggs are very sensitive to chsnges in ozone and the ultraviolet rays. Downtown in a 100 year old brick building? Yes of course! We split it and the sweet potato fries too. Still too much food, honestly. I was pleasantly surprised. They've got a good craft beer selection (they just need to educate the help -- I ordered an Imperial Stout and got some kind of IPA). And the wall of old-school pinball machines look like fun. The turnover in that strip center has been something else. That spot was a pretty good Mexican restaurant before it went down. Down at the end is a home cooking kinda place that just isn't very good, but always busy with the blue hair crowd. It's pretty much right off the Sysco truck type fare. That's the third restaurant in that particular spot. Be sure to give me a head's up next time you're in the neighborhood. John

BilletHead Posted August 29, 2016 Posted August 29, 2016 Ronnie the Pinball Wizard. Ever watch the movie Tommy? Well back to cooking here in BilletHeadVille. Made them on Naan flatbread. Finished them off on the charcoal grill. His and hers pies. Our tomato sauce, basil from the garden, last of the tomatoes, sausage in more of the tomato sauce that was added wild roasted garlic, pepperoni, mushrooms and onions. Mrs. skipped the onions. Then the cheese. Char grilled little mounds of goodness. This was Saturday. Sunday we had the last of the doves from last season. Getting ready to see if i can get a few Thursday. Seasoned flour with just some S&P. Then pan fried. Fried potatoes in goose grease then some smoked sharp cheddar melted in. A helping of green beans to make the plate a bit more healthy, BilletHead Johnsfolly and ness 2 "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!"
