BilletHead Posted April 26, 2015 Posted April 26, 2015 Breakfast came early this morning as we headed to the turkey woods well before dawn. We got to work a good bird for Mrs. BilletHead but couldn't get him to commit. Guess it was the cool misty morning here. Who knows but we got back pretty hungry so lunch got worked up before noon. More of my Thursday's bird was on the menu as was wild asparagus and grilled Vidalia onions. Eat for the seasons best I suppose. Wild asparagus trimmed up, While the inside cooking was going on I did the onion grilling. Drizzled olive oil on as they were being grilled, Asparagus out of the oven. They had been tossed in olive oil and sea salt and pepper, Turkey sautéed with olive oil until tender and then spicy Szechuan stir fry sauce added , Plated up eating seasons best. ness Posted April 26, 2015 Author Posted April 26, 2015 Trimmed and chunked up a small chuck roast, browned it in a skillet then threw it and a bottle of Herdez green salsa into the Crock Pot ©. Added a little chicken bouillon and let if go all day. Tasted for seasoning at the end added a shot of chili powder. Spanish rice and some seasoned pintos on the side. Bush's pintos right out of the can into the pot -- juice and all. Whatever sounds good, throw it in. I still had the chili powder out so I gave it a shot of that. Also thought it needed a little something more, so I squirted in a little honey. Run a potato masher through it to get some them mashed up and 'mix it well togedda'. I'm gonna write that one down. Sounds weird, but it worked. Get a little of the gravy from the beans and the chili on that rice. BilletHead and rps 2 John

From the bottle "Bold and Fiery. with hot peppers, onion, ginger and garlic. I know it sets you on fire going in and going out That sounds good Ness. I added a photo and a few more details. Chili was very tasty -- I've made it that way with pork a few times, but I've had my fill of pork for a while. Went for the beef, which cost more than twice as much as pork would have. Glad I did. John

I know my favorite thing at my favorite Chinese restaurant is Szechuan chicken. Spicy from dried chiles but not overwhelmingly hot, slightly sweet, lots of garlic. Soy sauce based, and maybe some wine in there too. No sour to it. Probably pretty Americanized, but who cares? Kinda standard Chinese food stuff makes up the rest. I can see how that sauce would really be good on wild game. John

When bidness slows down for you, how about you saddle up and ride on into town for a couple days? I'll show you big city livin' and koo-zeen like you never seen before. Sorry, no bonfires allowed here, and explosives are illegal in case you were wondering. We gotta pee indoors for the most part, especially during the day, especially in the front yard. No dumping either--everything's gotta fit into the two city-issued trash bins. Really, just bring yourself. Seriously. Nothing else but maybe a couple changes of clothes. Please. We've got rules. Don't want to scare you off, but I also don't want to understate the importance of conformity to our suburban statutes, or more importantly, expectations. I just want to introduce you to food made from the prime cuts, cooked on wood fires where creosote isn't an ingredient. Meat that's not from a can. Food that doesn't have to get creative on the ingredients list so people don't vomit just from reading the the label.
