Tonight I have a skirt steak piece I have rubbed with Sazon seasoning that I will fry. We also started a meatless Mexican Surprise. I have written and blogged about Surprise before. Without meat we call it Cheesy Salsa Rice. Seriously good food happening here.

Tonight my betterhalf made a shrimp and pasta dish. Kind of a version of a shrimp in an arrabbaita sauce, but she did not feel well so left out the red pepper flakes. So it was flavorful, but not spicy. The sauce included shrimp, s&p, oil, yellow onions, peppers, and mushrooms. Topped with a bit of parmesan.

I have a classic wieners, potatoes, and sauerkraut casserole in the oven. I have the prep for a side dish of pan roasted green beans with mushrooms and tomatoes and a Worcestershire sauce finish ready to go. Comfort food and experimental cooking in one meal in the Ozarks. What fun.

      Duck fried rice Vietnamese style. Made some rice and chilled it a couple of days. Really wanting to make some fried rice. Took a recipe out of one of my books. Only deviation we did is used some smoked duck. Got ingredients ready and fired up the big wok burner on the back porch and went to work. A tablespoon of goose fat then fried up a couple of eggs. Puled them out and another couple of tablespoons of goose fat again hot. Started working up ginger and bell pepper. Then green onions, garlic, Serrano peppers. Threw in the diced smoked duck for a bit. Next a bit of sugar, fish sauce and rice. Returned the egg to the Wok and then some chopped cilantro. Heated it all up and plated. We also had some fried turkey left from Sunday. Heated this up and added some store bottled sauce, bell peppers, onion and broccoli. Good eats for sure. A bit of a funny though. When Mrs. BilletHead added the fish sauce to the hot ingredients we both got a good strong sniff of it. This was the first time we have ever used this stuff. Both of us simultaneously wrinkled our noses. Said oh my can we eat this? Well it melded and fit right in :)  .

BH - I have used fish sauce frequently and I have the same reaction almost every time that I use this sauce. Still it adds an authentic Thai flavor to every dish.

Had my Betterhalf make some more of the fresh crappie. She followed a really easy baked fish dish. The fish is seasoned with s&p, little lemon juice, then coated with ranch dressing and parmesan cheese. Baked at 350 until flaky. Served with fresh broccoli.

With dishes this good, we really have to get back out and get some more crappie!

     John you ought to do Scampi with some crappie. Lots of butter and all the good stuff except no shrimp and use crappie. OhMyGosh it is sooooo good.

We have shrimp. So when we get more crappie, I would love to use both. Sounds great!
