Can't hear cooked spinach and not think of the Three Trails Elementary School cafeteria and how deflated we all were when that ended up on our plate. We had to taste everything. And Mrs. Davis and Mrs. Palmer were there to enforce the rules. There was one dude who loved it, and he would take it off your hands. But supply exceeded demand, and somebody was always left with some spinach. Second grade economics there.

I was one of the kids who would take the green globs of cooked canned spinach, myself and one other kid who wasn't quite right would compete to see who could eat the most.  The cafeteria cooks had a little shaker jar of spicy vinegar they kept for me.  I loved that stuff.

DANG Marty that looks good. I made our first chanterelle meal this morning. Dry sautéd the chanterelles then set them aside. Cooked some minced onion and chopped fresh tarragon from the garden. Added that to the mushrooms.

Cracked a variety of eggs (green, brown, white, small brown) from the chickens owned by those crazy chicken people;)! Added salt, pepper, granulated garlic to the eggs and a little water then beat them well. Made three omelets with the egg mixture. With the mushroom filling, added some Havarti and a provolone style goat cheese I picked up from the farmers market yesterday.

Fresh tomatoes (roma and gold cherry), black olives, onion, garlic, crushed red pepper, and one anchovy filet (rinsed, mashed, minced) are all going to make a fresh pasta sauce tonight. Just before I add the spaghetti to mix, I will add a bunch of shredded fresh basil.
