Walleye over celery and shallot rice pilaf with a carrot, radish, and lime salad.

I rubbed a sirloin roast and roasted it to 119 degrees internal. I seared it in a 500 degree oven for service. My komodo is out of service due to the remodel/repair work on my house and deck.

I made noodles with bacon, onion, and mushroom for the side dish. I chopped farmers market cucumber, tomatoes, onion, and radish for the salad to be dressed.

Sometimes it seems all I do is post about dishes I have made from left overs. Tonight was no different. I needed to work with the remains of the sirloin roast.

The result was a beef pot pie. I used a basic short pate recipe to make the crust and it turned out better than I expected.

Another reprise. I brought home a few trout yesterday. I dusted the filets with seasoned flour. I pan fired them in a little oil and butter until the fish was cooked through. I toasted slivered almonds with powdered tarragon, and S&P. Once the fish was done, I browned butter. I mixed the butter with the almonds, added some pinot grigio, and fresh squeezed lemon juice. Served the fish with green beans. Topped both with the sauce. Sorry not a great photo.
