On Friday my eighth grade will have a pot luck before the holiday. I promised a roast turkey and queso. We have an amazing line up of sides to go with that. I roasted the bird tonight. Sparchcocked and roasted at 400 for 1 hour 15 minutes.

Was searching for a recipe and stumbled upon this. Couldn’t pass on the chance to say I told ya so. They’re  gone.

Dirty T Shirt plans.  My Church is having its annual thanksgiving dinner this Saturday, and I have been volunteered to cook a couple turkeys.  Plan is to get a couple medium sized birds maybe 15 lbs or so, split them in half and submerge them in a basic brine, salt, water, and a few aromatics, maybe peppercorns and some fresh rosemary my wife has growing, and soak overnight.  Get up early Saturday and remove and rinse the halves off and plug in the electric smoker.  While it is getting hot I will rub some seasoning on the birds and give them to the smoker, assuming they will be done by noon easily.  Hopefully I will think to take a photo or two of the result before I deboned it all for them.

Maybe smoke one and roast one? More complicated but two choices. Of course, unless your church has less than 10 people, there will probably be plenty of other choices.

OK.  So is there such a thing as too much chili? 

Can't say.

last night a nice big bowl of chili and cheese and crackers and candied jalapenos.

breakfast two super easy eggs and a nice big dollop of chili.  I think they call it huevos ranchera

now chili dogs with more of those jalapenos.

Can say this much is not too much.

(nice and easy after hanging a perfect eater doe in the back yard)

Sounds good to me.  We have one of those no oil fryers.  When you inject a bird and cook it in there it is fit to eat.  Brining works great too.  Maybe even better.
