If I was retired and had the time, and was cooking for more folks I’d put in the effort. Just doesn’t fit at the moment. Love the idea of a long, slow cook with thin slivers of garlic and spices that have time to seep into the meat as it cooks. Also love the idea of a perfectly cooked piece of meat or fish. John

I cook for two and it works quite well, I would even cook for four if you and your gal pal come south some day . I seasoned the fish with S&P, fresh lemon juice, a light coating of ranch dressing, and topped with tarragon. Baked at 375 until the meat begins to flake and the topping was brown. I picked up some oyster mushrooms from our local Asian market and coated them with a special coating that I learned from a poster from this forum. Not confirming if this really is the special coating ! Not likely that the poster will tell me anymore secret recipes (... Terrierman). Spinach was just sauted, S&P, and a little garlic powder. Since I used all of our ranch on the fish, I found a recipe and we made our own dressing for the mushrooms ! BilletHead 1
