Going fancy smancy tonight.  Wife out on grandma duty so I stopped by the store and found a couple cute little salmon steaks.  Gonna season them up and givery them a quick sear in butter with a little olive oil, along with a creamy butter/lemon/caper/dill/garlic sauce.  Side of salad with cucumber and tomato in the bottom of the bowl and a handful of bagged salad on top.  What makes it smancy you ask, simple I am using 2 different forks, BOOM!

Nancy and I had a great day today, and now we are having fun. She is making a pizza dough. I have made a chicken stock sauce and spiked it with Italian Five Cheeses. I have tea-kettled spinach, sauteed some mushroom, and diced some marinated artichoke. I also thin sliced some left over chicken. Soon, all of this will come together in a Pizza of the Gods. Friday Night is Odd Ball Pizza Night!

You take a bundle of spinach and put it in a colander. You boil a kettle of water and pour it over the spinach to wilt it and mostly cook it.

Ok.  Thank you.  Never knew it had a "name".    Grandma always did it in big batches  Anybody like Spinach, Turnip and Collard greens all together? That, cornbread and crisp fried taters was 5 star.

I don't know that I have ever had them all together, but I don't see how it could be bad!  Especially add somee fresh fried fish fillets to that menu.

Valentines Day fell in the middle of our work week, so I promised the beautiful wife a culinary treats weekend.

In a short while this goes in the sous vide. This evening I will char some asparagus and steam some baby potatoes. Maybe a gochujang compound butter as well.
