Because of obligations I kept a strip steak at 130 for five hours in a sous vide.  When i seared it I wound up with a medium rare close to medium, but juicy. The potao lso wnt in the bath and then was finished in the high heat oven.

You know, I know, others know, but sometimes what you must do requires you to make compromises. In the case I needed to take the beautiful wife to the airport an hour away. Keeping her happy is worth all sorts of accommodations.

SelfLESSness works. Selfishness is at the root of most problems we encounter.

But, you still coulda done that in 15 minutes when you got back😄

As an explanation for online behavior the last few days, Nancy lost her mother on Monday. She flew out for the memorial in New Hampshire today. I will join her on Wednesday and we will be back Friday. Her mother was 95. I wish Nancy and I go more gently than she did - no years of being lost and confused.

Sorry, that's too much for a food thread.

Thank you for caring.

I do care.  May all involved feel well and loved by this world with all that can mean.  My sympathies.

Sorry to hear that. 95 is a good run, but spending the last years in a diminished state is always tough. I bet she left a legacy the first 80 or 90 years that will be what you remember.
