Terrierman Posted June 25, 2018 Posted June 25, 2018 I am here to tell you there is a world between broccoli that goes in the steamer five minutes after being cut, done tender crisp with some real butter melted over it versus anything that comes from the store. Sorry it's over for this summer. It's so good I will do my best to get a fall crop. Johnsfolly and rps 2

Johnsfolly Posted June 25, 2018 Posted June 25, 2018 Well back to being a bachelor. Last week I had to decide what to do with a chicken breast and some vegetables cut and stored from my last trip out to Maryland. Stir fry sounded good. Don't have a full arsenal of spices or sauces at the house yet. So had to run out for soy sauce. I found a market that not only sells fishing gear, but sushi grade salmon, tuna and octopus. That's my kind of store. Also a modest selection of scotch and whiskeys. Kept it simple, thinly sliced chicken, peppers, onions, some garlic powder, S&P and soy sauce. Served with some red beans and rice made by a distant Uncle of mine. Ben is his name. You might know him. Had a But Oak special County Line brew. This is there standard County Line Brown ale aged in bourbon barrels. The Bourbon flavor really comes out. rps and Daryk Campbell Sr 1 1
Johnsfolly Posted June 25, 2018 Posted June 25, 2018 Since it may be one of the last or close to it where I would celebrate Father's day with my whole family at one time, I really wanted a special meal. Instead I had a Zaxby's chicken salad between watching the Incredibles 2 movie with everyone and going to the shooting range with my son, his girlfriend and Livie before heading out to Maryland. So last night I did a make up meal for missing a special Father's day meal at home. Definitely not a meal that you could feed the whole crew unless you took out a loan. I started by parcooking a few Yukon gold new potatoes that I picked up at the farmer's market. Cut and set them aside. I threw a dozen little neck clams into a small amount of boiling water and covered them to cook. I got a pot of water infused with sea salt and the Chesapeake favorite Old bay to a boil and added a Maine lobster tail. I pulled the clams and drained the liquid pouring most into another pot of water and cooked an ear of local sweet corn. The clams got a little bit of cracked black pepper and some Old bay before they got a butter dip. I seasoned a filet steak with Montreal seasoning, garlic powder, and Old Bay (making this as much a Maryland dish as possible). I pulled the lobster out before it was fully cooked and split the tail. I dry sauted some local button mushrooms until browned, then added a small amount of oil and some spring onion slices then cooked until the onion had a bit of color. Set them aside and started to sear the steak. In another pan went the potatoes, some S&P, garlic, powder and a small pat of butter. I seared the other side of the steak and tented it with foil to cook further on the stove top. Once it was close to my doneness, put it on a plate, covered it with foil and let it rest. I added a pat of butter into the pan that the steak cooked in and put some color on the lobster. I pulled the corn, just some S&P and again with the Old Bay. No butter needed on the corn. Once I plated everything, I added some bleu cheese crumbles on the steak. Not only was this a really good meal, half of the lobster and steak are in the fridge for another meal, maybe a salad ! rps Posted June 26, 2018 Posted June 26, 2018 Last night the wife and I decided that it had been far too long since we made pizza. We used lots of basil from the deck garden, some prosciutto we picked up at Sams last week, seasoned tomatoes, and four cheeses. Terrierman and ness 2
Johnsfolly Posted June 26, 2018 Posted June 26, 2018 Okay Leftover time. Nothing like a nice healthy salad and then there is this one where I used the remaining lobster tail and steak from the other night, onion slices, cooked bacon, bleu cheese crumbles and olives. Would have been better if I wasn't at work . BilletHead 1
