BilletHead Posted September 30, 2015 Posted September 30, 2015 Chicken wings! Man I like them but the price, for what was a less desirable part of the bird. Out of this world, I cry FOWL . A buddy of mine buys ten pounds at a time from Sam's. Flash frozen in a big bag so that is what the Mrs. and I did yesterday. So today while Mrs. was at work I thawed up enough to go in the grill basket. Coated them up with some dust from hell. Dust from hell you ask? Ok last season I smoked some jalapenos and chilies. Right out of the smoker I put them in the dehydrator. Dry them until crispy dry like a rock. Then into a coffee grinder, chopper, blender etc. Grind the peppers into a dust. Caution do not take a wiff no mater what. NO! So coat the wing pieces lightly, a little goes along way. Grill baby grill those babies until done, So then if you wish toss in your favorite bbq sauce. Here I did in my home made sauce. I dug in right away but put the Mrs. wings into foil and set the slow cooker to warm from when she gets home from work. Terrierman Posted October 1, 2015 Posted October 1, 2015 Mine has three all spice berries, a bay leaf and then after that it will be up to me. Beef broth and some decent red wine (my standard is if you like it for drinking it will be good for cooking) will be in there, an onion, a garlic clove or two, some carrots, and I've got an eggplant that I think I will chunk up and put in as well. Hadn't considered tomato paste but who knows? And maybe some brown rice to add a little body. I love good braised beef and ox tail makes it so incredibly rich. And when I said the tail is seasoned and will sit in the fridge for a while, I'm thinking until Saturday. No rush. Mitch f 1
