Thank you. Original recipe was from Frank Stitts Southern Table. I played with it a little. The key is to use the minimum amount of panko for it to hold together.

Love to get that recipe if you'd share it.  My wife could eat crab cakes everyday.

I mostly use the same recipe for crab cakes as I use for fish burgers in the link below. The recipe came from Stitts originally.  However, in crab cakes I use lemon juice instead of lime, and I use nutmeg instead of Old Bay. That way you can taste the crab better. Of course if your wife likes Old Bay go ahead and use it. BTW, the fruit salsa (made with peach or mango also) in the recipe is killer on the crab cakes as well.

Guess what this means!  Just in time too, the two loaves from earlier are down to about 1/2 of one and there are tuna melt sandwiches on the menu for tonight.

Thanks Ness, looking forward to this little exercise.

I had to feed it all purpose flour.  Added about a teaspoon of sugar to help move things along.  Been maybe two hours and I see bubbles already.  I do have some bread flour for when the time comes, but I'm hoarding it for the actual bread.  We do have more ordered for Tuesday pickup curbside.

AP is fine, shouldn’t need sugar. Here’s a good resource. https://www.kingarthurflour.com/recipes/feeding-and-maintaining-your-sourdough-starter-recipe

Lovey is a big fan of Sourdough cooking.  We're running out of eggs so thinking flapjacks might be the first thing we do with it.  We are 100% breakfast eaters here.

I love sourdough!  When I heal up some I am not above begging for a start or buying a good one.  Have considered making my own start, but reported results seem to vary a lot from a good established starter.

I shall pay it forward with a start from @ness.  PM me your address when you are ready and it will happen.

I cannot compete with sourdough starter. Nor do I want to do so.

Comfort food at this house tonight. Mexican Surprise. Does not look like much or photograph well, but none of you would say no to a second helping.
