What color senko should I get? What's a safe bet?

green pumpkin or watermelon red 

If theyre feeding on bream, I like the green pumpkin with chrt tail.

Just pick out an olive green color and a brownish color, should be all you need.  Don't get hung up on flake colors or exact shades.  Any naturalistic soft plastic should be a color that closely matches the color of the bottom in the waters you're fishing.  If the fish are being picky enough to want watermelon green with red flakes instead of watermelon green with black flakes, you probably aren't going to have the right color anyway...and in reality they almost never are that picky.  Put it in front of them and if they are in a mood to eat they'll eat it.

Any variation of pumpkin or green pumpkin will give you results or any green/brown pattern for that matter. Don't get caught up to much in different color scheme's just stick to the basics. Not saying a bubble gum senko wont catch a bass but i am saying the ton of color variations are very good at catching fishermen if you catch my drift.

GYCB colors. 157, 297, 236, 051, 323, 903 (I think- Natural Shad), 187 ( I think root beer , green flake, black flake)

Not one person asked where you will be fishing your senko. Which means you and your question are secondary to our opinions. Which have no consensus. Which means color is meaningless. 

If it was, then there would be only one or two colors, right? 

Right. Buy white. Buy green. Then go fishing as much as possible.
