Wonder how much those bolt on whale tail things help out of the hole and if they are in the way in shallow water? anyone use them?

Whale tail benefits depend on the boat.  Our first boat (1650AW Alumacraft with a 90 Yamaha) ran great without one.  It had a good hole shot, decent speed for a 90 and could stay on plane at relatively low speeds as long as I had the trim tucked all the way under.  Our current boat however (1752 Blazer SS with a 115 Yamaha) has ZERO trim capabilities, stands up out of the hole and takes a lot more speed to stay on plane without the whale tail.  Though most anti-whale tailers will tell you that running one decreases top end speed, our boat actually runs a little faster with the whale tail due to the increased trim range.  My BIL's boat (1756 Troutt Special Xpress with 250 Yamaha) is basically un-driveable (sp?) without the whale tail due to how violently it porpoises.

Side benefit is when loading on a trailer in current.

Why is it that so many river ramps are built 90° to the current?    That's the most annoying thing ever.  😒

It did not on mine.  I started without one and Jeff at Troutt said you need it.  He said if I didn't prefer it he'd take it off and give my money back.  I liked it.  I did not lose any speed at all.  Thinking of putting it on my 90 now.

I practiced loading a lot when I first got mine.  It's an art.  I've mentioned this before.  Steering wheel spinner helps tremendously.

I absolutely hated loading a boat in the wind. I would hate trying to do it in current. Especially with some of the angles I see. I guess I won't be getting a river boat.

Even worse with a jet.....  No throttle, no steer.

I have a buddy that just sits on the deck and tinkers with tackle all day.  Out of a full day of fishing he might actually FISH for maybe one hour.   The rest of the day he is rooting around in his tackle, tying "FG knots" and perpetually re-rigging.

At the end of the day I always have 60.00-80.00 worth of FREE STUFF left in my boat.     If only it was crap that I wanted !!

I like the FG knot for my braid/fluoro setups, but I tie that one up at home and use an Alberto or double uni on the water if needed. My rods and tackle are pretty basic. I've been able to wittle it down to the basics after fishing out of my buddies boat more than my own last year during bass tourneys. I realized I really didn't need half the crap I usually brought along.

As long as they are wide enough so you can jack knife the trailer so it's angled down stream it's not a problem. It always surprises me how few people actually do that in heavy current. Loading the boat is SO much easier that way.
